Just another variation of the smoothie recipes I have already posted: Strawberry Pineapple Coconut Smoothie and Creamy Apple Cinnamon Smoothie. I usually order the Vanilla Bean Paleo Protein powder, but this time I decided to try out the Double Chocolate, which meant time to experiment with a new smoothie combination. I didn't want to get too crazy though, so I stuck to a strawberry banana combination. After hearing my mom slurp the end of the smoothie for five minutes, I think it's safe to say this was a delicious combo! I'll for sure be making this one again for her breakfast meal prep. If you make these ahead of time, throw them in the freezer, and just take one out the night before and put it in the fridge. By morning it is good to grab-and-go as a smoothie!

This turned out pretty amazing! I made this with breakfast sausage and used one orange pepper instead of red and green. I make these breakfast meal preps for my mom and she tends to pick out red peppers and anything green, so I thought the orange pepper would camouflage in better. Anyways, this was a delicious casserole to prep ahead of time and have ready for breakfast all week. Just like egg muffins, you can adjust this casserole to your liking and simply throw in any ingredients you enjoy. If you want a leaner protein source just swap the sausage out with some lean ground meat, or if you don't eat meat then add in some butternut squash, spinach, or other veggies! Who has time to make breakfast in the morning? Meal prep a casserole like this and be set, eating good, for the week!

Original recipe found here It's been a while since I made some egg muffins for my mom's breakfast prep, so I came up with this one to change things up. The egg muffin is an extremely simple on-the-go breakfast option to prep and you can make it to your liking. This time I went real simple (or lazy) and got some already riced veggies, onions, and some Applegate ham, but you can choose whatever fillings you like in your eggs. Not only were these super easy to whip together, but they turned out smelling and looking amazing too! I am pretty confident my mom will enjoy eating these for breakfast all week.
Egg Muffins with Ham, and Cauliflower and Sweet Potato Rice Ingredients:
If you remember my recent Paleo Banana Bread Muffins post then this one will look familiar. I bought my mom banana and blueberry muffin mixes from the Paleo Baking Company for Christmas and I decided it was finally time to give this blueberry one a try. Now she really loved the banana muffins using this mix, so I anticipated her also really enjoying this blueberry version too. Both require a lot of extra coconut oil, honey, and eggs, so make sure to factor those big ingredients in when checking out the nutrition facts on the package. I typically make my mom this Paleo Blueberry Pancake Muffins recipe instead, which is a lot more simple to throw together and lower in overall calories, fat, and carbs. Just throwing that out there as another blueberry muffin option though! Since I bought this mix for my mom as a gift and treat, she gets to enjoy them for breakfast this week. I always add a scoop of protein into these kind of recipes to sneak more protein in them, but you can leave that ingredient out if you wish. These type of baking mixes are a little more expensive, but if you are looking for a delicious tasting muffin or pancake that is dairy-free and gluten-free and easy to whip together then these mixes are worth trying!
Paleo Blueberry Muffins Ingredients:
Recipe from Paleo Baking Company Paleo Blueberry Muffin Mix package Trying out a new breakfast quiche for my mom's breakfast this week! My mom has always loved quiches, so one way to keep her happy with all of her paleo food is to make meals with familiar names of foods she used to like. It works majority of the time at least. For this quiche I totally changed the original recipe below and used ingredients I thought my mom would enjoy instead. Specifically, I swapped the cubed pumpkin for sweet potatoes and kale for baby spinach, and I left the mushrooms out all together. This was a pretty basic veggie and pumpkin quiche, so you can make ingredient swaps to your liking just like I did. Maybe next time I will try the recipe as is and see how my mom likes it. Anyways, if you don't have time for breakfast in the morning then prepping your breakfasts ahead of time can really help you out during the week. These egg recipes are always simple and easy to prep, always turn out tasting good, and are a great on-the-go breakfast option!
Crustless Vegetable & Pumpkin Quiche Ingredients:
Original recipe found here I bought this Paleo Baking Company Paleo Banana Bread Cake & Muffin Mix for my mom for Christmas so we could try new breakfast options for her. I actually bought her this mix and the blueberry muffin mix, only to realize that it is the same exact mix and you are required to add the ingredients that make it either banana or blueberry. What a let down... Anyways, as always I snuck a scoop of protein powder into the mix, but you do not have to do that if you don't want to. I also added some cinnamon and salt to this recipe, but besides those three additions, the recipe is what was on the back of the banana mix package. I actually noticed that my package directions differed from the ones below that I got online, so they must have updated their packaging at some point. Nonetheless, the package I received did not have the step below about microwaving the bananas, which I found extremely helpful, so I recommend following the directions below if you purchase this cake and muffin mix. I filled my muffin cups to the max and they did not rise much, but I think next time I would put a tiny bit less batter in. Filling it to the max got me 14 muffins, and I put 5 days worth in the fridge and the remaining muffins in the freezer. My mom absolutely loved these banana muffins and was really happy knowing this was her breakfast all week...which makes me think these definitely tasted like a treat!
Paleo Banana Bread Muffins Ingredients:
Recipe from Paleo Baking Company Paleo Banana Bread Cake & Muffin Mix package I’m typically in charge of making waffles on Christmas morning for everyone, which means I make a "normal" boxed waffle brand and a paleo waffle for myself. Not this year though! This year I made everyone paleo waffles and everyone loved them! I recently found this new Paleo Pancake & Waffle Mix by Bob’s Red Mill at my local natural food market, so I obviously had to buy it and give it a try. I was seriously so impressed with how they turned out. I have made plenty of paleo waffles before and none of them compare to how these turned out. Mainly they just didn't come out messy and actually resembled a normal waffle, but they also just tasted normal and delicious too. I used a smaller waffle iron (not a Belgium one), and this recipe made exactly 3 waffles, which is 20g Carbs, 25g Fat, and 15g of Protein. I ended up topping with bananas and a Tbsp of pure maple syrup for some more carbs, but you can obviously top it however you like. This mix does have Coconut Sugar in it though, so if you want to avoid added sugar I recommend sticking to Birch Benders Paleo Pancake & Waffle Mix. I actually have not used that mix to make waffles yet, but I have made these Paleo Blueberry Pancake Muffins with it as a staple breakfast option for my mom, which she loves. Anyways, if you are craving a waffle or are making breakfast for a large group, and want to find a paleo option that everyone will love, then I definitely recommend giving this recipe a try!
Paleo Waffles Ingredients:
These looked extremely simple to make and involved no baking, so I gave them a try for my mom's breakfast meal prep this week. Now I don't think I will make these that often because they are loaded with maple syrup/honey, but they did turn out tasting like a treat! I ended up using 100% maple syrup over honey and found that I had to add in additional maple syrup and almond butter because my mix was still dry. That might not be the case if you use honey instead though, I am not sure. Either way, I would reduce the gluten free oats to 1/2 cup next time to see if that would eliminate having to add in more syrup and almond butter. Other then that though, these were super easy to make and are a great grab-and-go breakfast or snack option!
No Bake Cinnamon Vanilla Breakfast Protein Bites Ingredients:
Original recipe found here This is basically just a fall remake of the Strawberry Pineapple Coconut Smoothie I have previously posted. I probably make these smoothies for my mom once a month because they are easy to prep and throw in the freezer, plus she really loves them! I figured I'd try out some fall flavors though and see what she thought. Whenever my bananas are too brown to eat I will peal them, split them in half, and throw them in the freezer to use later for smoothies and acai bowls. Anyways, I have a lot of frozen bananas in the freezer now, so this smoothie prep helped me get rid of some. I freeze these smoothies and let them thaw them out in the fridge overnight or defrost them in the microwave to drink as a breakfast smoothie. They are also perfectly tasty ice cream treats if you'd rather eat it that way. Anyways, I thought this smoothie turned out amazing and my mom also loved it! Definitely worth trying if you enjoy an apple spice flavor!
Creamy Apple Cinnamon Smoothie Ingredients:
This was originally an egg muffin recipe, but I used a full package of ground breakfast sausage and a lot of spinach, so I just poured everything into a baking dish instead. I figured that was easier then filling muffin tins and probably having a lot of leftover egg mixture. Anyways, this turned out looking SO green. I had to warn my mother it would not taste like "greens" and that it was actually really yummy. I like to throw the veggies in the food processor, so the are diced up nice and tiny, because my mom has mentioned to me that she doesn't like the "green stuff." Anyways, I was nervous about this one, but she ate the whole thing with no complaints! I typically make these breakfast dishes for her, so I did not actually taste it besides sampling a few cooked sausage pieces. Anything with eggs and sausage though is always a meal I would devour. I updated the recipe below with the ingredients and directions I used, but if you would rather make a smaller batch of egg muggins then check out the original recipe link below.
