Oh my goodness this meal was delicious!!! I have missed me some Brussels sprouts! Below is my version of the original recipe - I basically just doubled everything, but kept the oil amount the same, so I could get 8 meals. Since I increased the ingredient amounts, I decided to bake the Brussels and red onions separately from the chicken. This added some more time to meal prep, but I had the sweet potatoes in the Instant Pot anyway, so it didn't really make a difference to me. I baked the Brussels and red onions for 20 minutes, mixed them around, then baked for another 10 minutes and set them aside. Once those were done, I baked the chicken for just 20 minutes and they were done. Since I used bite size chicken breast pieces instead of chicken thighs, the chicken did not take too long to cook at all. Of note, you do have to marinate the chicken for 2 hours before cooking. I hate when I forget this piece, then go to meal prep only to realize I didn't marinate the meat yet. It's almost as if that happened to me this weekend or something... Anyways though, this meal is definitely worth making! Super easy, not many ingredients, and it turned out so delicious! I will be making this one again for sure!

This meal turned out incredible! I was sold as soon as I read the ingredients and looked at the original recipe's picture, but it truly tasted as delicious as it sounds and looks! I used closer to 3 lbs of chicken breasts and 1.5 lbs of Brussels, so I increased the apple cider to 3 cups. Also, my local food market is still selling fresh apple cider, so I didn't even have to search around for a quality one, which was super awesome. I kept the bacon at 5 slices, but you can increase that number if you want more bacon in your meals. I don't really have much else to say about this one. This was a one-pot meal and I did the slicing and dicing as the meal was cooking. Overall, pretty simple and easy meal to make and it turned out absolutely delicious. I am such a sucker for the fall recipes and this one did not disappoint! Make it!
One-Pot Apple Cider Braised Chicken with Brussels Sprouts and Bacon Ingredients:
Original recipe found here Finally a recipe that is not done in the Instant Pot or slow cooker. Well, at least not the main recipe...I still made the sweet potato mash in the Instant Pot. Anyways, I was super busy this weekend and have an even busier week ahead, so I ordered lunches from Territory Foods and quickly got this meal prepped for my other lunch this week. I have to admit, ordering just one meal from Territory Foods really helps when life gets busy and stressful. I highly recommend having a back-up plan for meals when you simply don't have the time or energy to expend meal prepping. Anyways, this meal got me really excited for all the fall recipes! This one was comforting, delicious, and extremely simple to make. I omitted the sweet potatoes from the original sheet pan recipe below, but made the rest as is. I did end up doubling everything too, so I ended up making that recipe in two batches and got about 8 meals out of it. Side note, I almost always throw my Brussels sprouts in the food processor, which is way more convenient then slicing them individually. I even threw the apple and onion in there too and that saved a lot of time I would have spent on cutting. I also doubled the Super Fast Instant Pot Sweet Potato Mash recipe below and kept that in the Instant Pot for 10 minutes. Instead of adding coconut oil, I just threw the drained sweet potato back into the pot, added a cup of homemade unsweetened applesauce, and used a masher to mash everything together. Easy and quick meal prep day for me and this meal turned out tasting amazing!

Original recipe found here I was out of town all weekend, so I made this meal before I left to make sure I had lunches already prepped for the week. In addition, I went ahead and ordered my other meals from Territory Foods (formally known as Power Supply), which is a meal delivery service in my area that I utilize when I can't meal prep everything myself. About this meal though... these are all recipes I have made before and ones I knew would be easy to throw together. The BBQ Chicken and Sweet Potato Applesauce Mash were done in the Instant Pot and were an amazingly quick and simple way to bulk make my proteins and carbs. The Instant Pot Sweet Potato mash is actually the same one I posted last week, just with an added homemade applesauce to mix things up. Also, I absolutely love Brussels with bacon, so I decided to just pair this delicious meal with that. I typically bake the bacon on a sheet pan first, then remove the bacon and set aside when done. With the bacon fat still on the pan, I throw the Brussels (shaved Brussels in this case) on top and mix it around with the bacon fat, throw some salt on top, and roast for about 20-30 minutes, mixing everything around every 10 minutes. This meal was a comforting and delicious one that was extremely easy to throw together!

Original recipe found here Very busy weekend for me, so along with a simple pressure cooker recipe I chose to grill some chicken and veggies and roast some sweet potatoes for my second meal prep. I made my own BBQ rub for the chicken and used some leftover rub to throw on the Brussels. Really easy and not much prep time whatsoever. While I was grilling the Brussels and chicken I had the sweet potatoes roasting in the oven. For the chicken you can also brush on some BBQ sauce while grilling if you prefer. My go-to paleo BBQ options are Tessemae's BBQ sauce or Steve's PaleoChef Peach BBQ, which are both sold at the Whole Foods near me. I also noticed a new Steve's Paleo Goods BBQ called PaleoChef Vinegar BBQ that I need to try. Anyways, not much to say about this one. I don't think I have ever made a grilled chicken recipe I didn't like and throwing some extra spices on the Brussels made them taste delicious as well. Take advantage of the last few weekends of sunshine and plan a meal prep on the grill!

I've made this amazing Roasted Brussels Sprouts with Bacon & Apples before and decided it was time to make them again! To pair with it I found the most basic baked chicken breast recipe out there. Since the Brussels are full of delicious flavor, pairing it with such a simple baked chicken was perfect and made for a super easy meal prep. I doubled the amount of Brussels and apples and also made a few extra chicken breasts to get enough food for six meals for myself and a couple for my mother. If you haven't made this Brussels recipe before then you absolutely need to try it! And if you are someone who doesn't like to spend hours meal prepping then this basic baked chicken recipe is for you. This meal was extremely easy and quick to put together and it turned out delicious!

Original recipe found here I was out of town this past weekend, so I planned ahead for an easy and simple meal prep Sunday. This is my version of the classic chicken, broccoli, and rice meal prep and it is way more tastier and enjoyable. Actually, the Roasted Brussels with Bacon and the Sweet Potato Applesauce Mash are probably my top go-to sides to meal prep. I love them so much I could probably eat them for every meal if I had to. There is little prep for both of them and although it takes some time roasting in the oven, you can be efficient with that time and get another meal done while you wait. You can also make this Balsamic Grilled Chicken during that time, if it's done marinating. Nothing fancy about the chicken, if you like balsamic chicken you will enjoy it. This meal is a comforting and simple one that I cannot wait to eat all week!

Original recipe found here Like the crockpot beef fajitas I made this week, I also prepped this chicken in a Ziploc bag the night before. Simple ingredients and very little preparation for this chicken marinade, so if you can I suggest also prepping the night before. If not, just make sure to let the chicken marinade for three hours before grilling. Since I had a crockpot meal and a grill meal for Sunday meal prep, I did not mind spending some time roasting Brussels and sweet potatoes. I tried to accurately write out the steps I followed to make them, so let me know if anything is confusing. I used two baking sheets to speed up time and cooked the bacon on those two sheets prior to roasting the Brussels and sweet potatoes. This way I was able to roast everything in bacon fat and make them taste even more yummy. That is the best way to roast anything in my opinion! This meal was inspired by this recipe, but clearly a lot different. I personally don't need any sauce to eat roasted sweet potatoes, so I basically just took the idea and added some grilled chicken and Brussels. I loved this grilled honey lime cilantro chicken and thought it paired great with the sweet potatoes. I'm also a huge fan of roasted Brussels (in bacon fat), so this meal was perfect and tasted absolutely delicious. If you give my version or the original recipe a try, let me know if you enjoyed it!

Inspired by this recipe It's summer time, which means all the crockpot meal preps and all the planning ahead. I was looking into freezer crockpot meals and found this blog post with 31 crockpot recipes you can freeze ahead of time. I've never tried freezing crockpot meals, but it's that time of summer when life gets really busy, and with prepping for mom as well, I figured this would really help me out. My go-to options for paleo BBQ sauce are Tessemae's BBQ sauce or Steve's PaleoChef Peach BBQ, both sold at the Whole Foods near me, which is super convenient! For this recipe I used Tessemae's BBQ sauce and I prepped and froze the ingredients beforehand as the recipe calls for. The pineapple BBQ mix was a sweet barbecue taste and the chicken turned out delicious. The barbecue spiced brussels sprouts on the other hand were more of a spicy barbecue taste, but still very yummy as well. I definitely recommend using no more than 2 Tbsp of that homemade BBQ rub with the 2lbs of brussels. The recipe makes close to 4 Tbsp and that is way too much to use all at once. Anyways, if you really like barbecue then this is a meal for you!

Inspired by this recipe With Easter this past weekend I decided it was best to pick one crock pot recipe to make. I chose this recipe because there was little maintenance involved; I could have the chicken cooking during Easter dinner and I could bake the sweet potatoes while I did Easter dishes. Now I haven't made my own BBQ sauce in a while, so I was a little nervous, but the chicken turned out really tasty. Although the sauce is tomato based, I thought it still tasted very much like a smoky BBQ sauce. I also conveniently made the Roasted Brussels, Apples, & Bacon as a side for Easter dinner. That was a pretty simple side to throw together and paired perfectly with the BBQ chicken stuffed sweet potato. This is a typical meal I would go for when I don't have much time to spend in the kitchen or don't feel like spending all day doing meal prep. If you ever need to mix up your standard meal prep, this is an extremely simple and perfect recipe to try!
