It's Thanksgiving week!! This stuffing was amazing and could easily be a Thanksgiving side dish or breakfast. I added 1 lb of lean ground beef to this recipe to make it more into a meal for the week. I also did not add the dried cranberries, but I think that would only make this meal taste even more yummy and fall-like. I did add the egg to try and make everything stick together, but I think adding an extra pound of beef means I should have used two eggs. Other then those alterations, I made the recipe as is and will definitely be making this again for family and friends to try too. This was absolutely delicious!

This casserole is seriously even more amazing and delicious then it sounds and looks! I have always loved the barbecue, chicken, and bacon combination, so anytime I find a paleo recipe with these ingredients I am going to try it. If you follow my blog some, you know my go-to options lately for BBQ sauce are either Tessemae's BBQ sauce or Steve's PaleoChef Peach BBQ, both sold at the Whole Foods near me. For this casserole I used Tessemae's BBQ sauce and absolutely loved it. I only had a few other notes about this recipe... First, make sure you buy a large spaghetti squash! Mine looked large in the store, but I was disappointed with how much spaghetti squash I actually got out of it after cooking. Side note, if you've never made spaghetti squash before check out these easy instructions for guidance (and definitely cook for 45 minutes). A second note I had was I didn't use a pound of bacon. As much as I love bacon, this casserole made me six meals and I did not want to eat a pound of bacon in six meals. I used 6 slices instead, but I think anywhere between 6-8 slices of bacon is plenty. Okay that is all. Seriously go make this recipe, you won't regret it!

Original recipe found here Casseroles are typically easy one dish recipes, but they hardly ever keep together for an appetizing looking picture. So despite how it looks, this recipe turned out pretty yummy. It is pretty basic with just chicken, Brussels, broccoli, Italian seasoning, and a sweet potato mash, so if you like all of those ingredients then you will enjoy this recipe; it tastes just like it sounds. If you end up trying this one out, don't skip out on adding salt to taste! That is definitely needed for this simple casserole recipe.

Original recipe found here I was looking around for a new sweet potato recipe and this Sweet Potato Lasagna caught my eye. The original recipe does include cheese, so if you are not dairy-free, check out the link below for that recipe. Even without the cheese though this turned out to be an awesome paleo version of the classic lasagna! It did take a little longer to make then I expected, but that is because I doubled the sweet potatoes and it took about an hour in the oven until the top layer of sweet potatoes were tender. Also, if you are making this paleo version without cheese, I would suggest using two eggs instead of one because one egg was not enough to pour over the casserole twice. Overall, I loved this sweet potato casserole dish and will definitely be making it again!

Original recipe found here I absolutely love this meal and have made it multiple times! It's pretty much a Shepherd's pie with sweet potato and it's not too difficult to assemble. Plus, this recipe doesn't call for too many ingredients, which I love. Anyways, I was unable to meal prep at all last week and relied on Power Supply, so it felt good to be prepping both my meals again this week. I added a lot more sweet potatoes to this recipe because it's the meal I eat before working out. With that being said, that meant I had to bake the casserole longer too. I probably baked the casserole for about 40-45 minutes, then still broiled for an additional 5 minutes. This meal is so yummy and definitely worth trying! Also, I have actually published this recipe already, but with a southwest twist that brings some more flavor, so definitely check out that version here as well!

Original recipe found here I realized this weekend that I still had some PaleoChef Sriracha Sauce left, so I decided to try this casserole dish out and it was just as amazing as it looks! I should note that for the first time in my meal prep history I bought rotisserie chicken instead of making my own shredded chicken. Don't judge. Anyways, this casserole dish was so simple and easy to make! I do think that the toppings are necessary, so if you make this, don't skip out on those! Next time I will also add some bacon. Original recipe found here I spent more time then usual in the kitchen last weekend, so I decided to choose recipes this week that would be a little bit less time consuming, like this casserole dish! I am always on the look for a good casserole recipe and this one is worth saving. I have made a Hamburger Casserole recipe before that was good, but turned out a little plain, so I was excited to find one that added some different flavor. I altered the original recipe's ingredient amounts so I could make six meals, so check out the original recipe for comparison. My only note about this recipe is if I were to make it again, I might decide to drain the beef or add some egg because the casserole did not stay together when I went to serve it. Original recipe found here You must try this one! Make your own taco seasoning too, it's pretty simple. This recipe is a little more time consuming because there are vegetables to be cut and you have to shred the sweet potatoes, but it is totally worth it. Find a sous chef and make this.
