This meal was the bomb! Since I made this for meal prep, and also need at least a cup of sweet potato per meal, I opted for roasting the potatoes separately in the oven. I then doubled the rest of the recipe (minus the black pepper and olive oil, there was no need for that much) to get me about 10 meals. I actually may have used closer to 3lbs of steak now that I think about it. Either way, the recipe itself was super simple and easy to make after you have all your ingredients diced and prepped. I paired this recipe with Cilantro Lime Cauliflower Rice, which is also super easy to whip up if you have the time. If not, another idea is to throw some plain cauliflower rice in with the peppers to cook. You can also throw the plain cauliflower rice into the same pan you cooked the steak bites and peppers (once you remove everything) to soak up the remaining flavors. I definitely over complicated this meal by roasting sweet potatoes in the oven, and separately making Cilantro Lime Cauliflower Rice, so don't feel like you need to do all of that. The steak bite recipe as-is below was extremely simple to make and is all done in one-pan. Most importantly, this is a meal you will truly enjoy eating all week long!

If you enjoy the classic Chinese Chicken and Broccoli meal, then this one is a MUST-try! I am not sure I have ever recreated this Chinese dish before, but this recipe is seriously spot-on and so delicious! This week was a rare occasion that I did not need to prep for anyone except myself, so I made the recipe as-is below (okay, I actually increased the chicken to 3lbs, but that was it). There is barely any prep involved with this recipe, and once you throw everything in the Instant Pot you are pretty much done. Talk about easy. If you don't have fish sauce then that is always an ingredient you can skip over. However, if you are open to purchasing some I always recommend the Red Boat fish sauce, and you can search my site for plenty of recipes that will put it to use, so it's not just wasting away in your fridge. If you don't have sesame oil, simply swap for coconut oil. Also, the arrowroot powder is totally optional as it is just a thickening agent. You can put the Instant Pot on saute mode and easily thicken the sauce up that way too, it will just take a little longer. Overall, this is absolutely a must-try recipe. Not only was it ridiculously easy, but it turned out tasting just like the traditional Chinese dish, and it even includes the vegetable (one less thing to plan - winning!). I still paired with some extra plain cauliflower rice and you can easily mix in your own regular rice for more carbs too. If you have an Instant Pot then save this one now and give it a try later!

Original recipe found here This is definitely my favorite jerk chicken recipe I have ever tried! I posted this exact meal back in 2016 and had to bring it back because it is that good. The list of ingredients for the marinade can be a bit overwhelming, but if you have the patience to throw everything into a blender, then it's smooth sailing from there. After that you just let the chicken marinate for at least a couple of hours, then throw it on the grill, and heat up the remaining sauce if you want extra dipping sauce with the meal. My biggest note is that this recipe makes plenty of extra sauce! You can easily double the chicken and still have enough sauce, in my opinion. The only time I'd recommend increasing the marinade ingredients is if you are making over 5-6lbs of chicken with this. I also don't ever use both habanero and serrano peppers, mainly because I can never find both at the store, but I have never found the sauce to be that spicy just using one or the other (I do remove the seeds though). Pairing this chicken with a cauliflower "fried" rice seems odd, but I've always really enjoyed the combo. If you are not a fan of cauliflower rice, or just beginning to throw vegetables into your routine, then I definitely recommend giving a recipe like this a try! Such a delicious recipe for sneaking more vegetables into your diet. You can also easily find frozen plain cauliflower rice at most stores these days, so don't feel like you need to make your own cauliflower rice if that intimidates you or slows your meal prep down. I wouldn't re-post a meal if it wasn't worth it! This one is definitely a must-try.

Another quick and tasty Instant Pot recipe to add to your collection! To save time on prep you can purchase already diced onions, garlic, can of fire roasted diced tomatoes, freshly prepared salsa and guacamole, and frozen plain cauliflower rice. Just always make sure to check the ingredient label when you purchase those items! You want to be on the lookout for any unwanted ingredients like sugar, preservatives, or any other unfamiliar names you don't need to throw into your body. That is just my tip for making meal prep easier though. If you have time to prepare all your own ingredients, then that is certainly the fresher and more cost-effective way to go. About the recipe though... After sauteing the onion and garlic, you throw all the ingredients (minus the chicken) into a blender, then top the sauce blend over the chicken, and turn the pressure cooker on. The only additional step I took was putting the pot on "saute" mode when finished and stirring frequently to reduce the sauce some. I do this with majority of Instant Pot meals, so that I am not leftover with too much extra sauce. The only change I made to this recipe was using chipotle powder in place of the chipotle peppers and adobo sauce, like the notes below suggest. I have never been able to find adobo sauce that only has whole food ingredients with no added sugars in it. I also opted for using half chicken breast and half chicken thighs, which I find tasty every time. You can easily double (or triple, in my case) the ingredients below to get enough food to fit your meal prep needs. Top with your favorite toppings, add some vegetables (I find cauliflower rice the easiest, especially in saucy recipes like this one), rice, and/or wrap in a tortilla (Siete’s grain-free tortillas are a great option), and enjoy this delicious meal all week long!

Notes: *If following a Whole30 or strict Paleo diet, you can use 2 tsp chipotle spice powder in place of the chipotle peppers and adobo sauce. **You can quickly saute the cauliflower rice to cook, or buy frozen rice and heat in the microwave. Original recipe found here I will definitely be making this again... and again... and again! This one turned out SO delicious and was relatively easy to throw together. I used just over 5 lbs of beef, 3 Tbsp of olive oil, 2 granny smith apples, and juice from 2 medium oranges (which equaled 1/2 C). Besides those ingredient adjustments though, which were just to accommodate for the increase in beef, I made the recipe below as-is. When the beef was done pressure cooking, I set the Instant Pot to saute mode to reduce the sauce some, and stirred around frequently. Once the sauce was down to a more desirable level, I let the beef cool before measuring and distributing over top of plain cauliflower rice. Since there was plenty of flavor and sauce with this beef, I really don't think you need to worry about cooking up the cauliflower rice any special way. I personally grabbed some frozen plain cauliflower rice and heated it up to make for an even quicker meal prep. I love a recipe that can be done in one pot/pan, doesn't have a ton of ingredients or prep to it, and of course turns out tasting amazing. This recipe is all of that and more!

Original recipe found here These turned out amazing and did not have an overwhelming orange taste to them whatsoever! My biggest note on this is the same note I have on all meatball recipes: bulk prepping meatballs is never a quick task. However, I tripled the meat and sauce on this one, so if you are not doing that then this could obviously be prepped much faster. Don't let that tip dissuade you from trying this delicious recipe though! This meal really did turn out SO tasty. I ended up using ground turkey instead of chicken, and then heated up some coconut oil and garlic to toss the cauliflower rice in before serving. If you are newer to the blog, I am a big fan of grabbing the frozen cauliflower rice and quickly heating that up to pair with most meals. Just make sure to check the ingredients label to make sure it only has vegetables listed! Those packaged foods can sneak in plenty of extra preservatives, sugars, and ingredients you don't need to be consuming. You can even find cauliflower rice mixes with other riced veggies as well if you aren't a big cauliflower fan. I really like this Riced Veggies Cauliflower & Sweet Potato one. Throw in some rice if you need more substantial carbs and you've got yourself a nutritious and delicious meal you can enjoy all week long!

Original recipe found here This meal seriously turned out SO delicious! I will definitely be throwing this into my meal prep rotation of favorites. Not too many ingredients or prep with this meal either - heat up the chicken breasts on the stove top and throw the sauce ingredients in a blender. Since I made this for meal prep, I increased the chicken breast amount significantly and threw them on a large baking sheet to bake in the oven, instead of going through batches on the stove top. I also doubled the sauce ingredients and still tossed it with the cooked chicken in a large skillet, as the recipe calls for. While the chicken was baking I heated up some coconut oil in another pan, simmered some extra grated ginger and garlic, then tossed cauliflower rice. Once cooked through, I added some extra fresh parley and salt and removed from heat. I thought this ginger garlic cauliflower rice was perfect with the Pineapple Ginger Chicken, and there was plenty of sauce to throw over top as well. Slip in some regular rice if you need it and you have yourself a well-balanced, simple, and tasty meal to enjoy! This one will not disappoint :)

Original recipe found here An absolute must-try! Although I clearly used chicken for this meal, the recipe below is for steak and seriously tastes delicious both ways. I've made this with both steak and chicken for friends and family and it's always a huge hit. For meal prep however, I opted for chicken since it's a little nicer on my wallet. If making this with chicken, I recommend slicing or pounding the chicken thin, and baking it at 375 degrees until cooked. It took me about 15 minutes to bake, then I finished with 5 minutes of broil. For everything else though I still followed the recipe as-is. Keep an eye while broiling the peppers and onions because they can burn fast! Also keep an eye on the steak too because that also cooks in no time. Since I made this recipe for meal prep, I doubled the marinade (oil and seasonings) to split between the vegetables and meat, and also doubled (probably even tripled) the vegetables and meat as well. I thought this meal turned out especially amazing over the Cilantro Lime Cauliflower Rice, which you can mix with regular rice as well. I've also had this meal with corn tortillas which turned out delicious too. Dress this up with salsa, guacamole/avocado, and/or whatever else your heart desires to make the most tasty fajitas! This really is a must-try recipe :)

I don't prep meatballs much anymore because meal prepping for Robbie, my mom, and myself would require way too much time forming a million meatballs. However, it was a short week for us this particular week since we were traveling, so I went for this recipe and am SO glad I did. I personally had to quadruple the meatball ingredients and only doubled the sauce to get us through half of a week. I probably could have made more sauce, but it was at least enough to top over the cauliflower rice and rice mixture. The recipe was supposed to have broccoli too, but I didn't purchase enough for both this meal and the other meal I made for the week, so I just left it out. I haven't had a true Teriyaki Chicken meal in a while, but I really thought this meal was pretty spot on and delicious! Not many outrageous ingredients to this recipe either and only a little bit of coconut flour, which I already had stocked in the house. If this recipe at all looks appealing to you then definitely give it a try! A better-for-you version of Teriyaki Chicken that you will truly enjoy.

My goal with these videos is just to visually show people how easy it is to prepare meal prep or maybe just a healthier meal. Plus, all the recipes I post are truly ones that I enjoyed eating all week - no bland meals that will send you running to the nearest fast food establishment before the week is over. Enjoying what you are eating is kind of key with maintaining a healthier lifestyle long-term. Anyways, I'll move on to talking about this recipe now. I made this one in both the slow cooker and Instant Pot and both turned out equally delicious and packed with flavor. The first time I made this I served it for fajita night with my friends, so we dressed it up with corn tortillas (Siete’s grain-free tortillas are a great option), peppers and onions, salsa, guacamole, and other fun toppings. This time I made it for meal prep, so I simply paired it with cauliflower rice and had some extra salsa and mini to-go guacamole packs to throw on top of it. You can still totally go the fajita route for meal prep though, it was just much easier for me to quickly heat up some frozen cauliflower rice. Like I said, both times this meal turned out delicious! My friends absolutely loved this one for fajita night and I enjoyed it just as much for meal prep all week. I went half and half with chicken breasts and thighs, purchased already made salsa from the produce section at the grocery store (check the ingredient label on those - most are made with whole food ingredients and no added sugars or preservatives), then already had all these spices in my pantry. Another extremely simple recipe that turned out really tasty!
