I seriously love when friends pass along recipes for me to try! This one turned out just as amazing as my friend said it was and it was really simple to make since there is not much prep involved. I ended up doubling this entire recipe and made the meatballs on the larger side. A hack I recently discovered for a cleaner way to form meatballs is to wet your hands with water while forming the meatballs. This is especially helpful when dealing with ground turkey or chicken since those meats tend to really stick to your fingers. Anyways, I ended up throwing all the meatballs on a baking sheet and baking in the oven to brown instead of on the skillet. This was just a lot easier since I doubled the recipe and had a lot of meatballs. After that, I followed the directions as is and cooked the meatballs in the slow cooker. While that was cooking I heated up four packages of Riced Veggies Cauliflower & Sweet Potato, only adding some salt, garlic powder, and a couple Tbsp of Coconut Aminos. I divided the rice out into all of my food containers, added the meatballs once they were done cooking, and topped each with a couple spoonfuls of the remaining sauce. Super easy meal to make and it was seriously so delicious! I definitely recommend giving this one a try.

Its Thanksgiving week!! I usually get the question if I am meal prepping for this week or if I am only doing a half meal prep, which is ironic because I especially look forward to meal prepping for this week. I try and find the most delicious fall recipes to make and enjoy a full week of Thanksgiving type food! Plus, once Thanksgiving is over I always have a couple comforting meals to ease me back on track without feeling like I am going "back to the diet." Honestly though, meal prepping delicious meals that I truly look forward to eating is always my goal. Anyways, I am getting distracted from this amazing recipe. This picture DOES NOT do the recipe justice! These meatballs turned out so delicious! Not only is there pumpkin in the meatballs, but pumpkin is also in the sauce, which turned out equally as delicious and also full of savory herbs and spices! I doubled the meatball portion of the recipe and made the sauce as is, besides increasing the tomato sauce and pumpkin puree a tiny bit, to get me a total of 10 meals. I served these meatballs over zucchini noodles, but the original recipe served them over sweet potato noodles. These meatballs can be served with any side of your liking though! Since zucchini noodles don't keep very well I only prepped three days worth of those and will prep more mid-way through the week. If this recipe even sounds a little bit appealing to you then I definitely recommend giving it a try! I absolutely loved this one!

Recipe Notes *If your mixture is sticky, wet your hands a bit before rolling into balls, as needed. **Blend your coconut milk to a smooth consistency before adding. If you prefer a slightly thinner sauce, use 1/4 cup coconut milk and 3/4 cup broth instead of 1/2 and 1/2. Original recipe found here I was talking to my friend on Saturday about how I didn’t plan any recipes yet for meal prep and she sent me this recipe she made last week! We both tweaked the original recipe and used sweet potatoes instead of russet potatoes, as the original recipes calls for. I also ended up adding ground turkey to the meal, so I just went ahead and updated the recipe below with the ingredients I used and instructions with what I did. Check out the link at the bottom for the original recipe if you would like to compare. Anyways, I ended up doubling what I listed below to get approximately 9 total meals (I make extra meals for my mom). Since I made so much, I opted for roasting the sweet potatoes separately while everything else was cooking on the stove top. The amount of bacon and sweet potatoes to use is really up to you. I typically use the same amount of bacon strips as meals I want to make. The key is just having enough bacon fat to cook the rest of the meal in because that really made everything taste delicious. For such a makeshift recipe, I really ended up enjoying this one!
Fried Cabbage and Turkey with Bacon and Sweet Potatoes Ingredients:
Original recipe found here I came across this breakfast meatball recipe and decided it was probably time to try a breakfast recipe that wasn't in the shape of a muffin. These meatballs were extremely easy to prepare and make, especially since I threw the bell pepper and spinach in the food processor. I make these breakfast recipes for my mom and she is not a fan of eating her greens, so the smaller the vegetables are the better. I made this recipe into 21 tiny meatballs and baked them for 20 minutes with an additional 5 minutes under the broiler. I also taste-tested one of the meatballs and thought they were delicious! I paired the meatballs with an egg that was scrambled with a little bit of culinary coconut milk and used this random Silicone Egg Ring I found to make the egg into a perfect circle. That part is totally not necessary, I just wanted to try it out. If you are looking to switch up your breakfast routine then this is a great recipe to try out!
Paleo Breakfast Meatballs Ingredients:
Notes *Any ground meat would work with this recipe. **If you use a higher fat meat, you can omit the extra virgin olive oil. Original recipe found here I was skeptical of this burger recipe when I picked it out, but it turned out tasting delicious! Not the best way to preface this post, but I had to grab the attention of all those people who might have the same initial thought I did. I highly recommend giving this recipe a try this summer! It was not only quick and easy to prepare and cook on the grill, but it really did turn out so yummy. I chopped up the spinach and don't even notice it was there and the cooked sweet potato really gave the burger some moisture. I basically doubled the original recipe and put the measurements I used in parenthesis below. It yielded about 8-9 burger patties for me. I threw some sliced tomatoes and red onions on the grill to top the burger with, but I gave some other suggestions for toppings below. Let me know if you make this one and if you enjoyed it!

This meal was pretty similar to the Paleo Egg Roll in a Bowl meal I've already posted. I also have the same feedback as I did on that one as I do for this one: this is the perfect meal prep to make when you literally have no time to meal prep. There is nothing fancy to making this, it's a one-pot meal, and you are done in under 30 minutes. I also bought bagged coleslaw instead of shredding my own cabbage, so that made for an even quicker prep. This recipe as-is yields about 3-4 meals, so double the ingredients if you need to. Of note, I mixed in some coconut aminos to this at the end to add some more flavor. I really enjoyed this meal and it tasted pretty similar to the Paleo Egg Roll in a Bowl I mentioned earlier. That one uses ground chicken or pork and this one calls for ground turkey, so you can really use whatever meat you prefer. This meal is really simple, but it is still delicious and one of the best recipes for meal prep when you are lacking time or motivation to stay in the kitchen long!

Original recipe found here Two casseroles for meal prep this week made for a quick day in the kitchen! I altered some of the ingredient amounts in this recipe, which I indicated in parentheses below, but that was just so I had enough protein and carbohydrates across all six meals I was prepping for. Most people do not need 5lbs of sweet potato, however I do and that is why my casserole has a large layer of sweet potato mash. If you don't have a potato masher you can always roast your sweet potatoes in the oven then peel and transfer to a food processor to make the mash. For veggies I picked up a bag of frozen broccoli, cauliflower, and carrots and ended up using the whole bag. Also, I usually hate the excesss liquid when transferring to the casserole dish, but I listened to the directions and kept it and I'm really glad I did. The casserole held together and turned out so flavorful and delicious! This was super easy to prepare and even easier to devour. About the veggies: you can use your favorite combo of frozen veggies. The original recipe used a mix of corn, peas and bell peppers (technically not paleo). I suggest using carrots, broccoli, cauliflower, or peppers. Original recipe found here Another really yummy meatball recipe! Since I already bought almond flour for a previous recipe, I decided I should put it to use before I forget about it. I subbed out the turkey sausage for ground beef, but I am sure turkey sausage would only of made these meatballs even tastier. Also, I opted for pairing the meatballs with spaghetti squash since I haven't made that in a while. I forgot how incredibly fast and easy spaghetti squash is to make! Check out this link for directions on how to make it. Anyways, this meal turned out amazing and is definitely a good slow cooker recipe to have ready for when life gets busy!
