Hi, my name is Erika Copeland (Theisen) and I am that crazy meal prepper blowing up Instagram with food pictures every other week. I have been documenting my meal preps for the last seven years now and wanted to find a better way to share the recipes to help others on their journey to a healthier lifestyle.
More About Me
I was a competitive athlete my entire life and played for the University of Maryland Women’s Soccer Team. After graduating and transitioning to a life without competitive athletics, I became extremely passionate about nutrition and living an active lifestyle. I found that meal prep was my best bet for eating healthier and making better food choices, and that CrossFit was an incredible environment for me to grow physically and mentally. I am currently CrossFit-L1 certified, Precision Nutrition L1 certified, and Nutrition Coaching Institute Level 1 certified. More about my Meal Prep
Although I tend to follow paleo guidelines, I simply believe in eating real, raw, and unprocessed foods. After reading The Wahls Protocol by Terry Wahls M.D., I am 100% convinced that food is medicine and that eating a paleo guided, gluten-free and dairy-free lifestyle is best for myself, my body, and my health. That does not mean I never eat outside of those guidelines (because I love waffles, pancakes, and cookies… just to name a few) but way more often than not I stick to this lifestyle.
This is where meal prep comes in. I am a super busy person, so meal prepping is absolutely the number one reason I am able to maintain this lifestyle. I typically spend Sunday evening’s meal prepping breakfast and two meals for at least the next five-six days. If I have nothing prepared, am hungry, and not at home, I am almost guaranteed not to choose the healthiest option to eat. Meal prep eliminates the possibility for me to choose an unhealthy meal or snack and eliminates the amount of times I go out to eat. I am able to maintain this lifestyle because I make sure the meals taste good and there is a wide variety to choose from. That sounds silly because of course you want to make meals that taste good, but generally when people start to clean up their diet, they make very bland meals or don’t have enough variety, which eventually leads to them returning to their old ways. My goal is to cook meals that don’t taste like I am on a diet or restricting myself, and to prepare food that someone who does not follow paleo would enjoy. Additionally, I don’t like making the same meal too often, I stick to simple recipes with fewer ingredients, and recipes with ingredients that I know.
I do want to note that I do not take ownership of any of the recipes I share unless I specifically say otherwise. I will try my best to source where the original recipes came from, but there are recipes I have collected over the years that I unfortunately don't remember where I found them. I also want to point out that there is a FAQ section that you might find helpful. Although I created this blog to share recipes, meal prepping is really what I do and recommend for others to try and do as well. I answer a lot of questions regarding meal prep in the FAQ section, but if there are any additional questions you have, feel free to ask me! After doing meal prep for so long, I forget to mention some of the details I needed to figure out when I first started. So please ask away, I'm happy to try and help.
