Between not having power to the oven and stove top, to being out of electricity all together, meal prep has been quite the struggle the last couple weekends! Since skipping meal prep is clearly not an option though, I found this new slow cooker recipe to try, utilized my trusty Instant Pot, and moved my meal prep to where there was power (thank you to Debbie if you are reading this!!). This Crockpot Garlic Honey Chicken is pretty similar to the Instant Pot Honey Garlic Chicken recipe I’ve posted before, but this one has some added vegetables to it, aka more nutrients! I used boneless chicken thighs for this one and thought the meal turned out really well! My only complaint is that thickening the sauce up in the slow cooker seemed impossible. After about 45 minutes I decided to just throw it on the stove top on high instead, which worked much better. I served this over straight up plain cauliflower rice (seriously just used the frozen bag you can pop in the microwave) since there was plenty of sauce to go on top, but feel free to serve over rice, a mixture of cauliflower rice and regular rice, or whatever you please. This meal was delicious, super easy to throw together, and will most likely go into my rotation of weekly meal prep recipes!

Yes I know these aren't skewers, but they were supposed to be! It was pouring rain all day, so I decided I was not going to get drenched outside just to grill these. Instead, I threw everything in a pan on the stove top and the meal still came out tasting delicious! You do need to prep the marinade before hand and let the chicken marinate for at least 30 minutes before cooking, so keep that in mind if you choose to try this one. Also, if you can, let the chicken marinate overnight for more flavor. I paired this with one of my favorite fried cauliflower rice recipes and absolutely loved how the meal turned out. I know summer is officially gone, but if there are still pineapples at your local grocery store and there's a weekend with warm weather, this recipe is worth making!

Original recipe found here Although this one says slow cooker, I threw it in the Instant Pot for 25 minutes instead and it came out great! I simply heated up a few packages of Riced Veggies Cauliflower & Sweet Potato to pair with the chicken, but feel free to pair with your favorite vegetable or rice instead. You can also always throw your favorite vegetable or potato in the food processor and pulse until it's rice like too! To help minimize the time I'm meal prepping though I've been purchasing frozen riced veggies, which stores seem to have a lot more of these days. Anyways, since this meal has plenty of sauce, you can honestly pair with a plain riced vegetable since it will get covered - just my opinion! The original recipe link below says you can just dump all the ingredients in the slow cooker, instead of sauteing the onions and sauce first, so if you're short on time then definitely go with that option. This meal was SO flavorful and I loved every bite. If you are a fan of an Indian-spiced meal then give this one a try!
Slow Cooker Butter Chicken Ingredients:
Original recipe found here This meal was incredibly easy to throw together and was full of so much color and flavor! The original recipe did not have ground beef in it, so I added that part in to get protein in the meal. If you do not eat meat though, just omit the ground beef and add some beans to get some more protein. I also only used a 28 oz can of diced tomatoes because I am not a big fan of soupy meals, and I used 3 bags of riced cauliflower (some were sweet potato rice too), which is another reason my chili did not turn out so soupy. With the ingredients indicated below, I made 10 meals with 12g Fat, 20g Carbs, and 25g of Protein, but you can adjust serving size based on your needs. If you need more carbs, you can simply just add some rice to the meal. If you need more fats, increase the olive oil amount or top each meal with some avocado. All of this was made in one large pot (I used a large dutch oven), besides the ground beef, which I actually just sauteed in my Instant Pot real quick, then through into the pot once it was cooked. A meal full of all the nutrients, done in no time! Definitely a recipe worth trying for your next meal prep.

Original recipe found here Dude, this meal was so refreshingly light and delicious! It was also all done in one pan and took no time to prep and finish. The seasoning below was the perfect amount and really flavored the cauliflower rice, so this is a perfect recipe for those who need a lot of flavor. I cut up chicken breasts instead of using chicken thighs, used frozen cauliflower rice, omitted the chicken stock all together (because there was so much stock left behind after cooking the chicken to begin with), and I threw in some halved cherry tomatoes at the end. Super easy and so tasty! Below is the serving size for 6, but I got 8 meals out of this. You can check out the original recipe link below though to adjust serving size and get your adjusted ingredient amounts if needed. Also, if you need some more carbs just simply throw in some rice with this and you're all set. This will definitely be a recipe that goes into my go-to meal prep rotation!
Whole30 Spanish Chicken and Cauliflower Rice Ingredients: Chicken

This recipe has very few ingredients and prep to it, but I will point out that you should check the ingredient label before purchasing the apricot spread and chiptole peppers in adobo sauce. I like to stick to ingredients that are raw, unprocessed, and do not contain added sugars or preservatives. For that reason, I skipped out on the chiptole peppers in adobo sauce and used this Frontier Chipotle Smoked Red Jalapeno spice instead. I linked a recipe below to follow if you want to make your own chiptole peppers in adobo sauce, but this recipe only calls for a Tablespoon, so I'd suggest just swapping for some type of Chipotle powder instead too. I found a quality apricot spread that I linked below, but there are other spreads out there too that don't have added sugars in them as well. About the recipe though, the chicken didn't turn out spicy at all (probably since I only used a Tablespoon of spice), but it was still absolutely delicious! Make sure to set 1/4 cup of the marinade mixture aside because I think that really completed the meal. I also really enjoyed this chicken paired with the Cauliflower Fried Rice recipe. I used a couple bags of frozen Green Giant Riced Cauliflower and left out the eggs, which made for a quick prep while the chicken was grilling. I will definitely be making this meal again soon!

Original recipe found here Now that Memorial Day has come it is officially time for all the grilling recipes! This one turned out delicious and had very little prep and cook time. I had some Primal Palate's taco seasoning for this chicken recipe, but if you do not have that you can simply make the homemade taco seasoning I listed below. I used just over 3 lbs of chicken breast and thought 2 Tablespoons of seasoning was plenty enough, but feel free to use a little more if you would like to. While the chicken was marinating I started making the cauliflower rice, and as always I used a couple bags of frozen Green Giant Riced Cauliflower. I've seen a couple other brands selling frozen cauliflower rice too, so just make sure to check the ingredients to verify there is only cauliflower and no unwanted added ingredients. Anyways, by the time the cauliflower rice was done, I put the chicken on the grill. This gave me some time to evenly divide the cauliflower rice between 8 meals. The only thing missing from this recipe is Fat! If you are in need of more Fat in this meal then definitely top with some avocado or guacamole. You can also add a couple Tbsp of coconut oil to the pan before mincing the garlic and cauliflower rice. This is a taco recipe after all, so dress it up how you like and enjoy!

Original recipe found here I absolutely love a good pesto meal and this one did not disappoint! I do have to point out though that it's tough finding sun-dried tomatoes that don't have any added ingredients or preservatives to them. Try to find fresh ones in the produce aisle or at your local natural market if you can. Also, I 100% recommend making your own pesto sauce. The recipe below came out delicious and was extremely easy to make while the chicken was cooking. I actually ended up adding the full serving of pesto sauce to the chicken because it didn't really quite make 1 cup worth for me. I also didn't have a lot of fresh basil though, which could be the reasoning for that. Anyways, while the chicken was cooking I heated up a few bags of Green Giant Riced Cauliflower on the stove top as well. All I added to the cauliflower rice was the leftover lemon juice and some salt. I am personally more of a fan of the cherry tomatoes over the sun-dried tomatoes, so next time I might decrease the sun-dried tomatoes and increase the cherry. Other then that note, I thought the meal turned out great! Not a lot of ingredients, didn't take long to make, and it came out tasting delicious!

Original recipe found here Ever have a meal that just makes you happy to eat? This one did that for me! It was seriously so delicious and paired perfectly with this first week of sunny weather in Maryland. Alright maybe I'm just excited to be eating pineapple and see some sun, but really this meal was the bomb! The original recipe link below has the option to increase serving size, which then adjusts your ingredient amounts. I adjusted it to serve 8 people, so please note that the recipe I posted below is based off the serving size for 8 people, with the exception of the oil and Tapioca/Arrowroot starch, which I significantly reduced back down. I did put ranges for both to leave it up to you and your needs/desires though. I personally used the lower number of all ranges and thought the below amounts worked perfectly for 8 servings. Anyways, the only ingredient that was tough to find was a quality pineapple juice. Unfortunately just about every juice in the local grocery stores have added ingredients and preservatives in them. After reading every label of juice in my local Giant grocery store though, I finally found the pineapple juice I linked below in the Organic/Natural food aisle. I was thrilled about it! I paired this with some frozen riced cauliflower that I heated up on the stove top with some salt and that was it. Pretty simple recipe to throw together without much prep and ingredients to it. I definitely recommend giving this one a try!
Firecracker Pineapple Chicken over Cauliflower Rice Ingredients: For the sauce:
Original recipe found here I haven't made a meal with mushrooms or bacon in way too long! If you are a fan of a creamy mushroom meal then you will definitely enjoy this one. The recipe below is my version for 6 servings, but the original recipe link below has the feature where you can adjust serving size, which will then adjust the ingredient amounts for you. As for this recipe, I picked up some Wellshire Sugar-Free Bacon from Whole Foods, used chicken breasts instead of thighs, and used Native Forest Organic Light Coconut Milk; however, I recommend using the classic full-fat coconut milk if you are making this recipe. Since I used chicken breasts, cut into smaller pieces, I just left everything on the stove top and did not cook in the oven at all. While the chicken was cooking I heated up a few bags of Green Giant Riced Cauliflower on the stove top as well. I went super plain with the cauliflower rice again because the meal had plenty of sauce. I promise I'll make a more flavorful cauliflower rice soon! Anyways, overall this was an extremely simple recipe for meal prep and it turned out tasting so yummy!
