Its officially time for all the fall foods, and this recipe did not disappoint! The prep work is really all that you have to do with this one, making it pretty simple for the non-cooks out there. If you want to minimize some of that prep work I recommend purchasing already cut brussels sprouts, and/or marinading the chicken the night before. Since I basically tripled this recipe below to get enough food for meal prep, the cutting and chopping did take up some time for me. Once all that prep work is done though, all that is left to do is throw everything on the sheet pan to bake. I actually ended up having to do this in two batches with all the food that I had. My only note I had with this recipe was that next time I'd roast the brussles sprouts and bacon for 10-15 minutes first before throwing the apples and chicken on top. That is just my preference though because I love brussels and bacon together and much prefer is to be well-roasted. That note aside though, all of these flavors together still came out tasting delicious and comforting, as expected. I will probably be making this one a few more times this fall!

I recently stumbled upon this Asian-inspired Paleo blog where I found this amazing recipe, and plenty of other delicious looking ones as well! This Chicken Stir-Fry with Cabbage and Shiitake turned out tasting like a true Asian stir fry and was actually pretty simple to make. I purchased matchstick carrots and bagged cabbage slaw to help minimize prep time. I also threw the shiitake mushrooms in the food processor to dice up real tiny, just so they would get lost in the stir-fry and the people I am cooking for didn't notice ;-). The only items left to prep are slicing the green onions, slicing or mincing the ginger (I preferred to mince), slicing the chicken and tossing with the seasonings. This is actually a step I goofed on - although the olive oil is listed under the chicken seasonings, that ingredient is just for when you are ready to cook in the pan. I accidentally threw it in with the marinade instead, not that I think it changed the flavoring that much. Anyways, I found that the chicken cooked much better in a wok then it did in my dutch oven, so I cooked in batches in the wok and used the dutch oven to prepare the rest of the stir fry. I only did this though because I increased the serving size to 15 for this recipe and had plenty of cabbage and carrots to cook. You can change the serving size of this recipe to your needs as well by going to the original recipe link below and adjusting the serving size amount up or down. Again, I thought this meal turned out tasting perfectly and was a delicious Asian stir fry! You will most definitely be seeing me post more recipes from this blog.
Paleo Chicken Stir-Fry with Cabbage and Shiitake Ingredients: Chicken seasonings
Original recipe found here After hearing from a couple of good friends that this recipe is their favorite, I'm bringing this one back from when I last posted it in 2016. However, for some reason my sauce looks way darker then it did the last time I made it. The only difference this time around was I used my trusty Instant Pot to saute and slow cook in instead of a crock pot, and I left out the Arrowroot Flour. Which now that I write this out, I am sure that Arrowroot Flour would have lightened up the sauce color for sure. I am getting side tracked though. This meal still turned out delicious! I recommend using a can of full fat coconut milk for the most flavor. Garam Masala and Arrowroot Flour are the only ingredients that you may not have in your pantry already. Garam Masala is just a spice that you can find at most grocery stores. You can even search my site for recipes that use the spice to make sure you put it to good use! The Arrowroot Flour is just a thickening agent, which you can totally omit or swap for another thickening agent if you want. I skipped using it this time since the saute mode on the Instant Pot helps reduce/thicken the sauce up. I love these saucey recipes because I can easily heat up or microwave frozen plain cauliflower rice to pair with this, and be done with meal prep. Super easy, super quick, and super delicious!

Original recipe found here If you enjoy the classic Chinese Chicken and Broccoli meal, then this one is a MUST-try! I am not sure I have ever recreated this Chinese dish before, but this recipe is seriously spot-on and so delicious! This week was a rare occasion that I did not need to prep for anyone except myself, so I made the recipe as-is below (okay, I actually increased the chicken to 3lbs, but that was it). There is barely any prep involved with this recipe, and once you throw everything in the Instant Pot you are pretty much done. Talk about easy. If you don't have fish sauce then that is always an ingredient you can skip over. However, if you are open to purchasing some I always recommend the Red Boat fish sauce, and you can search my site for plenty of recipes that will put it to use, so it's not just wasting away in your fridge. If you don't have sesame oil, simply swap for coconut oil. Also, the arrowroot powder is totally optional as it is just a thickening agent. You can put the Instant Pot on saute mode and easily thicken the sauce up that way too, it will just take a little longer. Overall, this is absolutely a must-try recipe. Not only was it ridiculously easy, but it turned out tasting just like the traditional Chinese dish, and it even includes the vegetable (one less thing to plan - winning!). I still paired with some extra plain cauliflower rice and you can easily mix in your own regular rice for more carbs too. If you have an Instant Pot then save this one now and give it a try later!

Notes: Chicken can vary in how much liquid it releases. If your sauce is thin, you can add a bit more thickener, or boil down the sauce using the saute function. Original recipe found here This is definitely my favorite jerk chicken recipe I have ever tried! I posted this exact meal back in 2016 and had to bring it back because it is that good. The list of ingredients for the marinade can be a bit overwhelming, but if you have the patience to throw everything into a blender, then it's smooth sailing from there. After that you just let the chicken marinate for at least a couple of hours, then throw it on the grill, and heat up the remaining sauce if you want extra dipping sauce with the meal. My biggest note is that this recipe makes plenty of extra sauce! You can easily double the chicken and still have enough sauce, in my opinion. The only time I'd recommend increasing the marinade ingredients is if you are making over 5-6lbs of chicken with this. I also don't ever use both habanero and serrano peppers, mainly because I can never find both at the store, but I have never found the sauce to be that spicy just using one or the other (I do remove the seeds though). Pairing this chicken with a cauliflower "fried" rice seems odd, but I've always really enjoyed the combo. If you are not a fan of cauliflower rice, or just beginning to throw vegetables into your routine, then I definitely recommend giving a recipe like this a try! Such a delicious recipe for sneaking more vegetables into your diet. You can also easily find frozen plain cauliflower rice at most stores these days, so don't feel like you need to make your own cauliflower rice if that intimidates you or slows your meal prep down. I wouldn't re-post a meal if it wasn't worth it! This one is definitely a must-try.

Another quick and tasty Instant Pot recipe to add to your collection! To save time on prep you can purchase already diced onions, garlic, can of fire roasted diced tomatoes, freshly prepared salsa and guacamole, and frozen plain cauliflower rice. Just always make sure to check the ingredient label when you purchase those items! You want to be on the lookout for any unwanted ingredients like sugar, preservatives, or any other unfamiliar names you don't need to throw into your body. That is just my tip for making meal prep easier though. If you have time to prepare all your own ingredients, then that is certainly the fresher and more cost-effective way to go. About the recipe though... After sauteing the onion and garlic, you throw all the ingredients (minus the chicken) into a blender, then top the sauce blend over the chicken, and turn the pressure cooker on. The only additional step I took was putting the pot on "saute" mode when finished and stirring frequently to reduce the sauce some. I do this with majority of Instant Pot meals, so that I am not leftover with too much extra sauce. The only change I made to this recipe was using chipotle powder in place of the chipotle peppers and adobo sauce, like the notes below suggest. I have never been able to find adobo sauce that only has whole food ingredients with no added sugars in it. I also opted for using half chicken breast and half chicken thighs, which I find tasty every time. You can easily double (or triple, in my case) the ingredients below to get enough food to fit your meal prep needs. Top with your favorite toppings, add some vegetables (I find cauliflower rice the easiest, especially in saucy recipes like this one), rice, and/or wrap in a tortilla (Siete’s grain-free tortillas are a great option), and enjoy this delicious meal all week long!

Notes: *If following a Whole30 or strict Paleo diet, you can use 2 tsp chipotle spice powder in place of the chipotle peppers and adobo sauce. **You can quickly saute the cauliflower rice to cook, or buy frozen rice and heat in the microwave. Original recipe found here I haven't seen a recipe that made chicken thighs in the Instant Pot this way, so I was excited to give it a try! I doubled the ingredients below for meal prep purposes and used a combination of cinnamon and ground cloves as an allspice substitute. However, that substitute stood out to me some while eating the chicken, so I would recommend just omitting if you don't have allspice. Some other notes I had were that I definitely didn't brown the thighs enough because they still came out falling apart. Also, my chicken turned out on the dry side, which is unheard of for an Instant Pot meal. I either cooked the chicken for too long (I increased to 25 minutes) or it's because the chicken is not really cooked in the liquid. Not sure what did me in, but I don't think I can give this recipe a fair assessment since I had a couple goofs. It was still pretty quick and simple for a meal prep recipe though, and I did still enjoy eating it all week long. Let me know if you give this one a try and what you think!

Original recipe found here These turned out amazing and did not have an overwhelming orange taste to them whatsoever! My biggest note on this is the same note I have on all meatball recipes: bulk prepping meatballs is never a quick task. However, I tripled the meat and sauce on this one, so if you are not doing that then this could obviously be prepped much faster. Don't let that tip dissuade you from trying this delicious recipe though! This meal really did turn out SO tasty. I ended up using ground turkey instead of chicken, and then heated up some coconut oil and garlic to toss the cauliflower rice in before serving. If you are newer to the blog, I am a big fan of grabbing the frozen cauliflower rice and quickly heating that up to pair with most meals. Just make sure to check the ingredients label to make sure it only has vegetables listed! Those packaged foods can sneak in plenty of extra preservatives, sugars, and ingredients you don't need to be consuming. You can even find cauliflower rice mixes with other riced veggies as well if you aren't a big cauliflower fan. I really like this Riced Veggies Cauliflower & Sweet Potato one. Throw in some rice if you need more substantial carbs and you've got yourself a nutritious and delicious meal you can enjoy all week long!

Original recipe found here Anyone else find it strange to read 'Lime Teriyaki', instead of 'Teriyaki Lime'? I had that similar feeling when tasting this chicken for the first time too. The first couple bites were different; I've never tasted these flavor combinations together, or anything similar to it before. The more I ate it though the more I stopped being skeptical and realized I actually enjoyed it. Probably not the best way to describe a meal you enjoyed, but that is my honest review. I thought it paired pretty well with roasted sweet potatoes, but then again I kept asking myself all week if it would pair better with a rice/cauliflower rice combination. The hint of lime is definitely there and throws you off (or threw me off for sure). I almost wonder if it would pair well with roasted plantains or plantain chips. Either way, you can make this recipe in either the slow cooker or Instant Pot. I chose the Instant Pot this time around and doubled the ingredients to make enough food for meal prep. I also skipped out on the arrowroot starch and just put the Instant Pot on 'saute' mode to help thicken the sauce. If you are using the slow cooker option and don't have arrowroot starch, you can bring the extra sauce to a boil on the stove top to help thicken/reduce some. I know I say it after many of my posts, but if you try this one out please let me know what you think! This one obviously left me with quite the first impression, so I'd love to hear what others think.

This meal seriously turned out SO delicious! I will definitely be throwing this into my meal prep rotation of favorites. Not too many ingredients or prep with this meal either - heat up the chicken breasts on the stove top and throw the sauce ingredients in a blender. Since I made this for meal prep, I increased the chicken breast amount significantly and threw them on a large baking sheet to bake in the oven, instead of going through batches on the stove top. I also doubled the sauce ingredients and still tossed it with the cooked chicken in a large skillet, as the recipe calls for. While the chicken was baking I heated up some coconut oil in another pan, simmered some extra grated ginger and garlic, then tossed cauliflower rice. Once cooked through, I added some extra fresh parley and salt and removed from heat. I thought this ginger garlic cauliflower rice was perfect with the Pineapple Ginger Chicken, and there was plenty of sauce to throw over top as well. Slip in some regular rice if you need it and you have yourself a well-balanced, simple, and tasty meal to enjoy! This one will not disappoint :)
