Bacon Butternut Squash Quiche over Roasted Sweet Potatoes

So this past weekend was the first weekend that I was out of town for since starting this blog. When I am out of town all weekend or am way too busy to meal prep, I usually order 5 lunches from Power Supply and then squeeze in cooking a really simple and quick recipe to get one more meal prepped for the week.
