Anyways, this stir-fry recipe falls under the first two hacks that the blog post points out: incorporate basic recipes and use your appliances wisely. I haven't made too many one-pot or stir-fry meals this year and forgot how simple and quick those recipes are. I did alter the original recipe some by increasing some of the ingredients (noted below) and adding cauliflower rice, so check out the original recipe below for comparison. Also, if you saw or made the Paleo Egg Roll in a Bowl I made a few weeks ago, this stir-fry was extremely similar and just as delicious. Both are one-pot recipes worth incorporating into your meal prep for when you have very little time to cook!
