Oh my goodness this meal was seriously incredible! 100% worth purchasing the dried galangal, fish sauce, and coconut aminos if you don't have those more specialty ingredients. I linked them all to Amazon, but you can probably get them cheaper in stores, well at least the coconut aminos that is. I didn't chance trying to find the dried galangal in the store though and just got some off Amazon. The good thing is that this meal was THAT amazing that I will be making this again like next week, so I'll put these ingredients to use. I increased the chicken to closer to 6 lbs, so I doubled the ingredients below. Instead of putting 8 slices of bacon in the Instant Pot though, I fried 4 of them in frying pan, then wilted the baby kale in the leftover bacon fat. Super easy vegetable pairing, plus this gave me some extra crispy bacon to top the meal with. I also heated up a few bags of plain frozen cauliflower rice, which is hidden under all that chicken. If you couldn't tell already, frozen cauliflower rice is my go-to vegetable for meal prep. Remember not all frozen cauliflower rice is created equal though. Check the ingredients on the back of the package and make sure you pick one that just has vegetables listed. Also, for all those Instant Pot users who think we need to add at least 1 cup of liquid to the pot in order to cook (no, just me?), apparently we were wrong. Since the chicken and pineapple release plenty of fluid, no need to worry about adding more liquid. If you are a sweet and salty person, then this is the meal for you! If you like quick and easy one pot Instant Pot meals, then this is the meal for you! If you like really incredible tasting meals for meal prep, then this is the meal for you! But really, this was so delicious.

This meal was seriously the bomb! By the end of the week I honestly contemplated just making it again for next week's meal prep. Plus, you know it's a good one when all your coworkers tell you how good it smells everyday. Anyways though, fairly simple recipe and all done in one pot (I used a large dutch oven). I threw the red onion and garlic in the food processor, then while those were sauteing I threw the brussels sprouts and kale in the food processor to shred too. If you are not a kale person, I recommend throwing them in the food processor too because you legit can't pick the kale taste out of the meal whatsoever. An easy way to get more vegetables and micronutrients into your diet. Of course you don't have to throw any of these ingredients in the food processor at all if you'd rather slice and dice them on your own, or just purchase them pre-cut. Besides that, I'm not sure what else I can say about this meal other then you must give it a try!
Beef Bacon Plantain Hash Ingredients:
Original recipe found here Super yummy and easy burger recipe to prep! I threw the spinach and red onion in the food processor instead of spending time finely dicing everything. After that all you need to do is throw the spinach, red onion, ground chicken, and spices together in a bowl and form the burger patties. When dealing with ground chicken or turkey, I have found it extremely helpful wetting my hands with water before shaping each burger - way less sticky and messy! Anyways, since the rain held off I decided to just throw the burgers on the grill instead of the skillet. If you don't have Adobo seasoning, check your local or natural grocery store for some, or just use the alternative spices listed below. I paired this with baked sweet potatoes that I actually cooked in my Instant Pot using a steamer basket (recipe is below), which I think might be my preferred way for now on when bulk making sweet potatoes! Previously I skinned and cubed all my sweet potatoes and just threw them in the Instant Pot with 1-2 cups of water. Once they were done I drained and threw them back in the instant pot on saute mode for a couple minutes to mash everything together. Another pretty easy way to bulk make sweet potatoes, and also gives you the opportunity to add different spices or fat to the mash, but using the steamer definitely takes less prep on my part. While all that was going on I threw the extra red onion on a sheet pan with some green and yellow squash, added a tablespoon of olive oil and some salt, and just baked in the oven for 20-25 minutes at 375 F (moving around half way through). Pretty easy meal to throw together that I absolutely look forward to eating all week!
