I mentioned last week that it was time to pick out some casserole dishes to make for meal prep, so here is another good one! If you've never made a paleo Shepherd's Pie before then you are missing out. I have never made one that I disliked, plus they are super simple to prep and throw in a casserole dish to bake. I decided to try out this new recipe below, but if you scroll through the casseroles category (on the side bar to the right) you can find a couple other ones that I've made in the past (or you can just type Shepherd’s Pie in the search bar). This particular one turned out amazing though! I diced the pepper, onion, and carrots in the food processor because I was lazy this weekend and did not want to do any chopping. Just throwing that note out there for anyone else that finds chopping to be too consuming. Also, the original recipe calls for flaxseed meal instead of egg whites, so if you have that ingredient and want to use it then check out the link below. This Shepherd's Pie turned out so delicious and is definitely worth trying!

I've posted this paleo meatball recipe a couple times now, which means this recipe is clearly one of my favorites! I decided to switch it up this time though and pair it with a garlic cauliflower mash, and I even used ghee (clarified butter) as the recipe calls for. If you don't have ghee you can use your favorite cooking fat instead, which is what I have always done in the past whenever a recipe called for ghee. However, I recently bought ghee to make tasty paleo meals for my mom, so I am just making sure I put it to use. Anyways, I cannot believe how delicious the cauliflower mash turned out! I haven't had mashed potatoes in a long long time, but I really thought it tasted just like mashed potatoes. I was a little nervous that the meatballs and marinara sauce might not pair well with the cauliflower mash, but this meal tasted amazing. Also worth noting is that I used two 12oz bags of frozen cauliflower and barely had enough mash for 6 meals. These recipes are seriously worth making, both separate or together!

Funny story about this recipe. I had the link up for this one on my dad's computer a while ago and he apparently couldn't help himself to ever close out of it because it looked really good. Well eventually he just decided to make it for himself and he really loved it! I now know the trick to getting my whole family to eat paleo ;-). Anyways, like my dad, I really enjoyed this meal and I really loved that it was a one-pot and quick recipe to make! I am not sure why it is called a cheeseburger casserole though because there is no cheese and no casserole dish involved. I ended up doubling this recipe with the exception of the chicken stock and crushed tomatoes, but that was just because I prefer a little less liquid. I also did not mix the sweet potato noodles in and just left them on top of the meat and covered until they were soft. I only made the noodles this way though so that I could measure out how many sweet potatoes were going into each of my meals. Also, it seems like most stores sell sweet potato noodles these days if you don't have a spiralizer. I made my own using this Farberware Spiraletti Slicer Cutter I bought from Target last year and it always gets the job done. I see this recipe being a repeat in the future by myself and my dad!

Original recipe found here Any recipe with "One Pot" in the name will get my attention! This one turned out amazing and was super quick to make. I thought the directions were a little confusing, so I ended up just skipping over step 3 and added the zoodles to the pan at the end like it says to do in step 6. I also did not use any arrowroot starch or added water. If you want to thicken up your sauce some though, then definitely add the arrowroot starch. Also, most grocery stores these days sell already spillarized noodles if you don't have your own spiralizer or don't feel like spiralizing your own zoodles. I used my Veggetti (I found this for pretty cheap at my local grocery store a while back), which makes zucchini noddles extremely fast and is super easy to use. This meal turned out pretty sweet and absolutely delicious! If you are in search for a one pot and easy recipe to make then this is one for you.

Original recipe found here I really believe the key to eating better is making meals that are so delicious you look forward to eating them over anything else. This meal reminded me of that because instead of going to pick something up to eat after meal prepping, all I wanted to do was eat this meal. It turned out so amazing! The taco skillet was super easy and fast to throw together. If you double the meat like I did, make sure to use a bigger pan. My pan was overflowing once I added all the veggies, which is probably why I forgot to add the spinach at the end. Also, I listed the ingredients below to make your own paleo taco seasoning, which I definitely recommend doing. That recipe yields about 4 tbsp of seasoning too, so I stored half of it away to use another day. I also really enjoyed the taco skillet with the roasted sweet potatoes. It might sound strange, but it turned out tasting delicious paired together! Since I cubed the sweet potatoes a little bit larger then normal I baked them in the oven for a total of 45 minutes, flipping over half way through. I would recommend anyone to try this recipe! It truly turned out so delicious and was prepped and done in no time.

Although I now have an oven, my Sunday was super busy so I knew it was best to choose one slow cooker meal. I made everything as the recipe calls for except for leaving the slow cooker on low for that last hour once I added the coconut milk and vinegar. I thought the beef turned out super flavorful, but also a little dry, if that makes any sense. I know my slow cooker works faster then others, so maybe I should have only left it in there for a total of 4 hours instead of the 4 1/2 + 1 more hour. I also used a different cut of beef, so that probably played a role as well. Anyways, I paired this with my favorite cauliflower rice dish that everyone should definitely try at some point! Pairing this with the beef stroganoff was delicious and absolutely made the meal complete. Don't let my comment about the dry beef sway your decision on this one because everything was still full of flavor and I honestly really enjoyed this meal. If anyone makes this one please let me know what you think!

I still don't have a working oven, so I decided it was time to try a stovetop recipe. I completely altered this recipe and added two cauliflower heads, riced, and also doubled the ground beef. I kept everything else the same besides using more of a rounded measurement on the spices. I really enjoyed this meal and the way it turned out, but if you are newer to eating paleo or just eating better in general, I'd recommend sticking to the recipe as is. The cauliflower rice definitely took away from the butternut squash and other flavors, which made me realize I probably should have only added one head of cauliflower rice. Again though, I love cauliflower rice and didn't mind, it was just something I noted for next time. I also riced the butternut squash in the food processor because I was nervous it wouldn't cook through all the way on the stovetop. There is nothing worse then uncooked butternut squash! Anyways, just throwing that idea out there in case anyone else feels the same way. This recipe was super easy and fast to make if you're ever in need of a quick meal prep idea.

Whenever I search for casserole recipes I can't find any, but when I don't look for them I seem to come across all of the casserole recipes. Hard life, I know. This recipe turned out amazing! I think any meal with spaghetti squash is a comforting meal. I ended up doubling the ground beef, spinach, and eggs, but kept everything else pretty similar to as is (might have rounded my spices to get some more in there). Of note, I used a larger squash, so that took closer to 45 minutes to bake in the oven. A good indicator for when the squash is done is when it's soft to touch. Also, since I doubled the beef, I used a 9 x 13 dish and cooked for 30 minutes. This meal turned out so yummy and it was super easy to throw together. Definitely recommend trying this one out!

Original recipe found here I was so excited my friend sent this one to our group text last week! This recipe was absolutely perfect for meal prep on super bowl Sunday. I prepped and put the roast in the crockpot around noon and let it slow cook for 8 hours while I watched the football game. My friends also convinced me to pair this with a cauliflower mash, which I'm glad they did because this meal turned out tasting delicious. For the mash I just steamed about 2lbs of cauliflower and threw it in the food processor once it was done. I added a tiny bit of coconut milk (the thick part at the top of the can), salt, and garlic powder and that was it. Really simple and fast side. I was really pleased with how this meal turned out! I'm also super thankful for friends who make delicious healthy food and share their recipes :)

Original recipe found here This was amazing!! I deviated from the original recipe a tiny bit just for meal prep purposes, but I imagine making the recipe as is would be just as delicious. The two big changes I made was I roasted about 5 sweet potatoes and doubled the ground beef. Every other ingredient was as the recipe calls for with the exception of the eggs. I decided to leave out the last few steps in the recipe and did not add eggs at all. My main reasoning for that though was I wanted the meals to last six days. If I were making this recipe for breakfast or for family and friends I would have added the eggs. So if anyone makes this recipe as is, please let me know how it turns out! Again, this meal was absolutely delicious. You can really never go wrong with roasted sweet potatoes and bacon!
