This was an unexpected game changer! I prepared the grated sweet potato and spices the night before, so all I had to do the next day was throw everything in the crockpot. Well that was the plan, but since I did not get home until later in the day, I actually threw everything in the Instant Pot for 25 minutes instead. There are not many ingredients to this recipe whatsoever and it turned out tasting plenty flavorful and delicious! I loved it paired with the Garlic Cauliflower Mash recipe too, but that is just my preference. All I added to my mash was cauliflower, garlic cloves, salt, garlic powder, and 1/2 Cup broth (I left out the extra added fat this time since the meatloaf had enough for me). I'm always looking for new ways to eat sweet potatoes and I will definitely be throwing this recipe into the rotation for now on. Plus, it was seriously too easy to make that it's a great recipe to save for meal prep. Definitely recommend giving this one a try!

This meal was seriously the bomb! By the end of the week I honestly contemplated just making it again for next week's meal prep. Plus, you know it's a good one when all your coworkers tell you how good it smells everyday. Anyways though, fairly simple recipe and all done in one pot (I used a large dutch oven). I threw the red onion and garlic in the food processor, then while those were sauteing I threw the brussels sprouts and kale in the food processor to shred too. If you are not a kale person, I recommend throwing them in the food processor too because you legit can't pick the kale taste out of the meal whatsoever. An easy way to get more vegetables and micronutrients into your diet. Of course you don't have to throw any of these ingredients in the food processor at all if you'd rather slice and dice them on your own, or just purchase them pre-cut. Besides that, I'm not sure what else I can say about this meal other then you must give it a try!

Original recipe found here I made this Instagram post a couple weeks ago about where my nutrition journey started in 2013 and a friend commented about the avocado and sun-dried tomato stuffed burger I was "food logging". Honestly, I totally remember that burger being SO tasty, so I found it and brought it back! It also brought back even more memories of all the paleo food blogs that helped get me started with my journey. It is truly my biggest hope that my blog here is that same resource for many others who are either just getting started on their nutrition journey or need some motivation and help along the way. If you are reading this, thanks for visiting the site and feel free to reach out if you ever have any questions! I didn't have it all figured out in 2013, but every year I made small improvements. That one small improvement you can make today is simply making one nutritious meal to eat, like this one. Plus, it's really delicious and now you have a weeks worth of one daily nutritious meal to eat! More about the burger though...there are only 4 ingredients plus salt and pepper. I have been eating them all week and haven't noticed the avocado turning that gross brown color either. I think the key for that is to make sure the avocado mixture is truly stuffed inside the burger and not finding it's way out the sides. Also, I have found it tough finding sun-dried tomatoes that don't have any added ingredients or preservatives in them. My recommendation is to find some fresh ones in the produce aisle or at your local natural market if you can. Let me know if you give this one a try and what you think!

This meal was incredibly easy to throw together and was full of so much color and flavor! The original recipe did not have ground beef in it, so I added that part in to get protein in the meal. If you do not eat meat though, just omit the ground beef and add some beans to get some more protein. I also only used a 28 oz can of diced tomatoes because I am not a big fan of soupy meals, and I used 3 bags of riced cauliflower (some were sweet potato rice too), which is another reason my chili did not turn out so soupy. With the ingredients indicated below, I made 10 meals with 12g Fat, 20g Carbs, and 25g of Protein, but you can adjust serving size based on your needs. If you need more carbs, you can simply just add some rice to the meal. If you need more fats, increase the olive oil amount or top each meal with some avocado. All of this was made in one large pot (I used a large dutch oven), besides the ground beef, which I actually just sauteed in my Instant Pot real quick, then through into the pot once it was cooked. A meal full of all the nutrients, done in no time! Definitely a recipe worth trying for your next meal prep.

Original recipe found here My friend sent me this one and I am so glad she did because this meal turned out tasting amazing! Not to mention, it was super easy to throw together. If you don't have a pressure cooker there are also instructions for using the stove top, or you can brown the beef then throw everything in the slow cooker. I basically quadrupled this recipe below to get about 12 meals, swapped out the dried marjoram for oregano instead, and set my Instant Pot to manual for 30 minutes since I had a lot more food. The original recipe suggested adding rice to this as well, so I added Riced Veggies Cauliflower & Sweet Potato to the meal. I heated up 3 bags of that rice mix separately and measured it out equally into each of my meal containers while waiting for the Instant Pot to be done. Really easy and simple meal to make that turned out tasting delicious. I definitely recommend giving this one a try!

Original recipe found here This one sounds and might even look a little odd, but this meal turned out tasting delicious! I pretty much doubled the original recipe and ended up using ground beef instead of lamb. For the cauliflower mash I ended up adding 1 1/2 Tbsp of coconut oil and no coconut milk, and I thought that turned out perfect. I also did not add the cauliflower mash into the slow cooker for the last 30 minutes since I wanted to portion out my meals first. For the slow cooker part I chose high for 4 hours and I thought that might have been too long. I suggest doing the 6-8 hour slow cook instead or check on it after 3 hours if you need to choose the high setting. Overall though, this meal turned out really good and it was so easy to throw together, including the cauliflower mash. Definitely a great meal prep recipe!

Original recipe found here I get a lot of meal prep recipes from the blog Paleo Running Momma and the ones I've tried always turn out delicious! I definitely recommend sifting through that blog when you have the time. I always try to pull out the easier and simple ingredient recipes that she posts, like this slow cooker meatball one. I doubled the meatball ingredients to make enough for my weekly meals and also a few meals for my mom. I did not end up making the sauce portion of the recipe because my friend hooked me up with some homemade Italian sauce that her family makes, which was amazing! For the noodles I tried something a little different and mixed spaghetti squash together with zucchini noodles. I thought that combination turned out tasting great and paired well with the meatballs and marinara. For the spaghetti squash I preheated the oven to 400 degrees, cut the squash in half lengthwise, removed the seeds, placed the cut side down on a baking sheet, and baked for 40 minutes. For the zucchini noodles I just put them on top of the meatballs in the slow cooker once there was 30 minutes left on the timer. Super easy! Also, I set the slow cooker to 4.5 hours on low since I doubled the meatballs and that was too long. I recommend sticking to 3.5 hours on low and definitely no more then 4 hours. Overall, I ended up really enjoying this meal and it was really easy to throw together.

NOTES *You can use your favorite mix of ground meat as well **I recommend always adding extra basil and garlic if you use plain tomatoes. ***Each slow cooker is a bit different. I cooked mine for 4 hours, you can check at 3.5 hours if you can and adjust cook time from there, if necessary. Cook time should not be longer than 4.5/5 hours or meatballs will be overcooked and dry. Original recipe found here My friend made this last week and reported that it turned out delicious, so I had to give it a try! The original recipe below serves 4, so I increased the meat to 3lbs boneless short ribs (6 pieces) and about 5lbs of sweet potatoes to get a couple extra meals out of this, and a lot more sweet potato mash. This recipe does call for using a Dutch oven, but I guarantee you can also make the recipe as-is, but when it's time to put the ribs in the oven, just throw them in the crockpot on low for 8 hours. I cannot give a fair assessment on the Chipotle Smashed Sweet Potatoes since I did not use the chipotle in adobo sauce or add ghee. I don't enjoy real spicy food and I didn't feel like I would be able to find a paleo option at the store. I did include a link below if you are up for making your own Paleo Chipotle Adobo Sauce though. Instead, I just added 1 tsp of smoked paprika (you can also used chipotle powder if you have that, which I did not). I left out the ghee because the ribs have enough fat for the meal itself, and you know sometimes less is more. I thought my version of the sweet potato mash turned out smoky and delicious despite leaving out those two ingredients. The ribs also turned out amazing and it was super easy to make everything. If you want to spice up your meal prep or dinner one week, I recommend giving this one a try!

I prepped the crockpot ingredients in a large Ziploc bag the night before, so I could easily throw everything in the crockpot first thing Sunday morning. Of note, I also added a cup and a half of beef broth to the crockpot before starting it because I thought it needed some more liquid (that was not in the original recipe). I set the beef to slow cook for 8 hours and prepared the cauliflower fried rice later in the day. This is the same cauliflower fried rice I made a few weeks ago and one that I will definitely be making a lot more of! I think it's my new favorite cauliflower rice recipe and it is one my mother has eaten multiple times without any complaints, so that means it must taste great. Once the beef was done, I shredded it and threw as many of the leftover peppers in the crockpot as I could back into the meat. I served over the cauliflower rice and topped with salsa and thought that combination was perfect. I think topping with avocado or guacamole would have also paired great with this. Not only was this meal incredibly simple and easy to prepare, but it turned out so delicious. There is no reason not give this one a try!

Original recipe found here I am taking a class all this week, so I wanted to make my meal prep easy, but also make sure I made an amazing meal to look forward to eating all week. I've made this balsamic pot roast before and it's so incredibly yummy. Ironically my friend sent me a picture of this meal last week saying how delicious it was too. She threw this in the Instapot for 30 minutes, so if you have that appliance and want a quicker meal prep then there you go! Also, even my family has implemented this one into their rotation of dinner recipes and I'm sure those of you cooking for your whole family understand the challenge of finding something healthy that everyone will eat. Basically what I am saying is you need to give this recipe a try! I decided to pair this with some roasted sweet potatoes like I did last time because I really enjoyed that combination. I am not sure I've ever picked two crockpot meals for meal prep before, but I knew I was going to have a busy weekend and even busier week, so I tried reducing the stress of meal prep a little bit. I cooked one of the crockpot meals over night and threw the other meal in the crockpot first thing in the morning. This worked out perfectly and really helped my meal prep on Sunday, so if you are in need of a new suggestion for easier meal preps then give that a try. Also, give this pot roast recipe a try too! You will not be disappointed!
