A Nom Nom Paleo recipe, so you know it's a good one! My friend made this one last week and loved it, so I had to give it a try. I ended up using Pork Tenderloin instead of shoulder roast, and my friend used a beef roast, but both ways turned out tasting DELICIOUS! The only other ingredient I changed was I omitted the serrano peppers and just threw in some red pepper flakes instead. If you really like spicy though, go for the serrano peppers and let me know how it turned out! I have gotten better with eating spicy foods, but I decided to just play it safe. For the cauliflower rice I went super easy (as always) and just bought a few bags of Green Giant Riced Cauliflower and heated that up on the stove top. I threw in some extra chopped scallions, salt, and a little bit of juice from a lime and that was it. There was plenty of leftover sauce in the Instant Pot to throw back over everything, so really no need to make any fancy cauliflower rice with this meal. Also, there are slow cooker directions in the notes below if you do not have a pressure cooker. There is no excuse not to give this one a try! It was so easy to make and seriously turned out amazing!

Another recipe recommendation from a friend! This one turned out delicious and if you can tell I actually added normal rice to this meal too. It's that time of year where my carb intake is extremely high, so I've started to add rice to some of my meals to help meet my daily goal. I've actually found that mixing normal rice with cauliflower rice is my favorite, so I apologize for all the cauliflower rice meals I've been making recently. Anyways, about this recipe... I altered some of the original recipe ingredients and used coconut aminos instead of soy sauce, tomato paste instead of ketchup, and chicken breasts instead of thighs. Those swaps are shown in the recipe below, but if you want to see the original recipe or alter the serving size/ingredient amounts, click the link below. If you have a pressure cooker, then this chicken meal takes very little time to prepare! (If you don't have a pressure cooker though, you can simply throw this meal into the slow cooker on low for 8 hours too.) While that was cooking I made the Garlic Cauliflower Mash. Instead of using the food processor, I drained the cauliflower, then threw it back on the stove top on medium heat and used a wire masher to make the mash. The food processor definitely makes the mash more smooth, but the masher is another simple and easy way to make a mash. Overall, I really enjoyed this meal and it was not like one I have made before, so I enjoyed something different! I have a feeling this one will be thrown into the weekly meal prep rotation alongside my Homemade BBQ Pulled Chicken and Buffalo Chicken.

This meal turned out so delicious and was extremely simple to make! I threw the pork in the slow cooker first thing in the morning, so that it was done by the time I got home later in the day. Since there was not much prep for the pork, it did not take much time at all to get it started in the slow cooker. When I got home later in the day, I took the pork out to shred and brought the remaining sauce to a boil on the stove top (or put on the saute function if you used an Instant Pot), then let it simmer until it thickened up some and poured it back onto the pork. While that was going on I started the Chipotle Butternut Squash Sweet Potato Mash. I originally wanted to make a Pumpkin Sweet Potato mash, but since pumpkin is not in season I couldn't find any at the store. I guess I could have went for the canned pumpkin, but instead I swapped it out for butternut squash. This combination still turned out tasting amazing and it was a good change up from my normal plain Jane sweet potato mash. The chipolte chili powder spice also gave it a little kick and it paired great with the Apple Cider Pulled Pork. This is a meal I really look forward to eating all week!

*I used closer to 7.5 lbs of sweet potato and 3 lbs of butternut squash for this recipe, so I put them in the pressure cooker separately. I put the sweet potato in the Instant Pot for 20 minutes, then let the sweet potatoes drain while the butternut squash was in the Instant Pot for 10 minutes. This meal definitely came out tasting like a Chinese Chicken and Broccoli dish! I loved this meal and it was all done in the Instant Pot, which made for an easy meal prep. I basically tripled this recipe below to get more meals prepped for the week, but I only doubled the chicken broth, coconut aminos, and fish sauce. I also did not use any arrowroot flour, but instead removed the chicken and left the sauce in the pot on the saute mode until it thickened up some (while stirring every so often). Oh and I totally forgot to add in the apple cider vinegar at the end, which I was really bummed about because I feel like that would have only made this meal even tastier. Anyways, if you think you would enjoy this meal then you will and you should definitely give it a try! If you don't have fish sauce or can't deal with the smell then I recommend just leaving that ingredient out because it does have a very distinct fish smell. I decided to pair this with my go-to super fast Instant Pot sweet potato mash, but this can easily be paired with rice too!

*I always use at least 6 lbs of sweet potatoes, 2 cups of water, and cook it for 10-15 minutes. Original recipe found here I seriously love when friends pass along recipes for me to try! This one turned out just as amazing as my friend said it was and it was really simple to make since there is not much prep involved. I ended up doubling this entire recipe and made the meatballs on the larger side. A hack I recently discovered for a cleaner way to form meatballs is to wet your hands with water while forming the meatballs. This is especially helpful when dealing with ground turkey or chicken since those meats tend to really stick to your fingers. Anyways, I ended up throwing all the meatballs on a baking sheet and baking in the oven to brown instead of on the skillet. This was just a lot easier since I doubled the recipe and had a lot of meatballs. After that, I followed the directions as is and cooked the meatballs in the slow cooker. While that was cooking I heated up four packages of Riced Veggies Cauliflower & Sweet Potato, only adding some salt, garlic powder, and a couple Tbsp of Coconut Aminos. I divided the rice out into all of my food containers, added the meatballs once they were done cooking, and topped each with a couple spoonfuls of the remaining sauce. Super easy meal to make and it was seriously so delicious! I definitely recommend giving this one a try.
Slow Cooker Turkey Teriyaki Meatballs Ingredients: For the Meatballs
Original recipe found here My friend sent me this one and I am so glad she did because this meal turned out tasting amazing! Not to mention, it was super easy to throw together. If you don't have a pressure cooker there are also instructions for using the stove top, or you can brown the beef then throw everything in the slow cooker. I basically quadrupled this recipe below to get about 12 meals, swapped out the dried marjoram for oregano instead, and set my Instant Pot to manual for 30 minutes since I had a lot more food. The original recipe suggested adding rice to this as well, so I added Riced Veggies Cauliflower & Sweet Potato to the meal. I heated up 3 bags of that rice mix separately and measured it out equally into each of my meal containers while waiting for the Instant Pot to be done. Really easy and simple meal to make that turned out tasting delicious. I definitely recommend giving this one a try!

Original recipe found here Every New Year's I get together with my friends for a long-weekend trip and each couple is responsible for making one of the dinner or breakfast meals for everyone. This year I made one of the dinners and this is the meal I made. It was originally for the slow cooker, but I made this in the Instant Pot instead, so both directions are below. Not much prep or many ingredients to this meal and it turned out tasting delicious! We ended up doing a stuffed potato bar and had a bunch of toppings out for people to choose from. To keep it paleo you can top with diced tomatoes, green onions, bacon, or a paleo BBQ sauce. Honestly though, I didn't think this pork really needed any toppings because the pork tasted great on it's own, but that is just my opinion! In case you were wondering, I did also put out some non-paleo toppings and baked a couple white potatoes for my loving friends who always accommodate for me when they are cooking :). Anyways, the broccoli slaw also turned out tasting yummy and was a great pair for this pork. It was also really easy to throw together, so if you are ever in need of a quick veggie side I would recommend giving this one a try. I know I didn't technically make this one for meal prep, but I know I will be making it again for meal prep in the future because it really was so delicious!

Original recipe found here Although the recipe name below says Instant Pot, I ended up throwing this one in the slow cooker. After purchasing and using the Instant Pot so much recently, I forgot how nice it is to just throw a meal in the slow cooker early in the day and not worry about having to finish it up until 8 hours later. Anyways, this meal looks a little bland, and it could definitely be topped with some tomatoes/salsa and guacamole/avocado, but it honestly did turn out tasting very flavorful and delicious! I didn't see any boneless pork shoulder at the store, so I used center cut pork chops instead. I also did not broil the pork when I was done, although I do know adding some ghee and broiling the pork would have made this even tastier. For the Mexican seasoning I used Primal Palate Taco Seasoning, but if you don't want to purchase a special seasoning I also listed a recipe for making your own taco seasoning below using spices you already have in your kitchen. For the cauliflower rice I simply bought a few bags of frozen Riced Veggies Cauliflower and heated it on the stove top with some olive oil, garlic salt, some of the taco seasoning, and juice from 1 lime. Don't let this bland picture fool you, this meal was packed with flavor and was extremely easy, simple, and quick to throw together for meal prep!
Five Ingredient Instant Pot Carnitas Ingredients:
*The original recipe used Frontier Mexican Seasoning, but I used Primal Palate Taco Seasoning, but you can make your own taco seasoning (recipe below) or just use chili powder. Reduce or omit the sea salt if your spice blend is already salted. **To make these carnitas in a slow cooker, omit the water in Step 2. Cook on low for 8-10 hours. Remove the meat and shred with two forks. Spread the meat out on a foil-lined baking sheet and moisten with a little of the cooking liquid. Broil for about five minutes, until browned to your liking. I was out of the country all last week, so after a long day of traveling home I knew I would not want to spend my first day back being in the kitchen. Anyways, when I purchase lunches from Territory Foods, I typically still try to prep one additional meal for the week, and this is the meal I made. I didn't have a plan going into Sunday, so I just looked through my blog for a recipe that I knew would be easy, had very few ingredients, and that I could quickly throw together. As far as homemade paleo BBQ sauces go, this one is by far the easiest one to make and is delicious! This is definitely a recipe worth bookmarking if you are one who doesn't like purchasing expensive paleo BBQ sauces from the store or online. Both the chicken and sweet potato mash were done in the Instant Pot, but I am sure both can be done in the slow cooker as well. This is definitely an example of my go-to kind of meal for when I need something quickly prepped, but it is still a meal I really enjoy eating and could eat everyday if needed. This is the one blog post you should definitely bookmark, well besides the main LiveSqueezy page of course. Here are my recipes for the super easy meal prep we all resort to when we don't feel like cooking. First, the classic slow cooker shredded chicken. This chicken can be a little bit tastier with a little cooking fat, chopped onion and garlic, and a few spices. Now you have a ton of plain shredded chicken that you can dress up however you want throughout the week, or throw into the freezer to have ready whenever you need. Ideas for dressing up plain shredded chicken:
For this week's meal prep I simply dressed my shredded chicken with Steve's PaleoChef Peach BBQ sauce since I already had a bottle in the kitchen. The next easiest bulk meal prep recipe to make is this pressure cooker sweet potato mash. If you are someone who likes to meal prep, cook in bulk, or just save time in the kitchen, then the pressure cooker is absolutely worth the investment. Anyways, I have now posted this sweet potato mash recipe way too many times, which is the biggest indicator that it's not only my favorite, but it's also extremely efficient, simple, and delicious. Although I post it a lot, I try to vary it up slightly each time. This week I added some garlic cloves into the mix (I know, huge difference). You can play around with this recipe by adding different spices and cooking fats, or adding coconut milk or unsweetened applesauce at the end. You can also add in other vegetables/squashes, like cauliflower or butternut squash, to roast in with the sweet potatoes as well. Get creative! I like to make a TON of sweet potato mash so I can have some for dinner too if I want. I love to make up my own Sweet Potato Bowl and add almond butter, paleo/gluten free granola/muesli, and blueberries. I have also tried topping it with a couple eggs, shredded coconut, ghee, spinach, and bacon. There are so many possibilities! Hopefully these ideas help your meal prep get a little easier or different! I know I post a ton of recipes and it might seem overwhelming, so if you are new to meal prep or just hate being in the kitchen, these are some ways to have the basics prepped to get you through your week.
