Hamburger Casserole

Next time I make this one I will double the spices or even add more spices. I ended up topping with more salt and pepper because it tasted a little plain. A good and quick casserole recipe though that I will definitely be making again.

Hamburger Casserole
Ingredients:
  • 1 large head cauliflower
  • 1lb ground beef
  • ½ tsp cumin
  • ¼ tsp paprika
  • ½ tsp dried oregano
  • Sea salt and pepper
  • 1 cup coconut milk (I don't shake the can so I can just use the thick part of the coconut milk, then add a little extra of the liquid part if needed)
  • 2 eggs
  • ¼ cup sliced almonds

Directions:
  1. Preheat the oven to 350 degrees.
  2. Cut the cauliflower florets into smaller pieces.
  3. Place a steamer pot over medium heat with a few inches of water. Add the cauliflower and season with salt. Steam until barely cooked and them remove and set aside.
  4. Place the ground beef in a frying pan over medium heat and season with salt and pepper, cumin, paprika and oregano. Break up the beef into small pieces with spatula. When the meat is mostly cooked remove from heat and set aside.
  5. In a small bowl, beat the eggs, coconut milk and broth together with a pinch of salt and pepper.
  6. In a casserole pan, layer the cauliflower and ground beef. Pour the egg mixture over it making sure everything is covered.
  7. Bake the casserole for 40-45 minutes until the center is set.
  8. Add the almonds and broil for 2-3 minutes.
