Although the recipe name below says Instant Pot, I ended up throwing this one in the slow cooker. After purchasing and using the Instant Pot so much recently, I forgot how nice it is to just throw a meal in the slow cooker early in the day and not worry about having to finish it up until 8 hours later. Anyways, this meal looks a little bland, and it could definitely be topped with some tomatoes/salsa and guacamole/avocado, but it honestly did turn out tasting very flavorful and delicious! I didn't see any boneless pork shoulder at the store, so I used center cut pork chops instead. I also did not broil the pork when I was done, although I do know adding some ghee and broiling the pork would have made this even tastier. For the Mexican seasoning I used Primal Palate Taco Seasoning, but if you don't want to purchase a special seasoning I also listed a recipe for making your own taco seasoning below using spices you already have in your kitchen. For the cauliflower rice I simply bought a few bags of frozen Riced Veggies Cauliflower and heated it on the stove top with some olive oil, garlic salt, some of the taco seasoning, and juice from 1 lime. Don't let this bland picture fool you, this meal was packed with flavor and was extremely easy, simple, and quick to throw together for meal prep!
Five Ingredient Instant Pot Carnitas Ingredients:
*The original recipe used Frontier Mexican Seasoning, but I used Primal Palate Taco Seasoning, but you can make your own taco seasoning (recipe below) or just use chili powder. Reduce or omit the sea salt if your spice blend is already salted. **To make these carnitas in a slow cooker, omit the water in Step 2. Cook on low for 8-10 hours. Remove the meat and shred with two forks. Spread the meat out on a foil-lined baking sheet and moisten with a little of the cooking liquid. Broil for about five minutes, until browned to your liking. This is an amazing recipe recommendation and meal suggestion my friend sent me last week! Plus it's a Nom Nom Paleo recipe, so you know it's a good one. Honestly though once I saw pressure cooker I was sold. That Instant Pot is a serious meal prep game changer. Instead of using a Pork Shoulder Roast I used Center Cut Port Roast since it's a little bit leaner. I also did not end up putting the cooked pork in a skillet to crisp up at the end, but I imagine that would make the pork even tastier. The original recipe pictures a taco salad with the carnitas, but I opted for a baked sweet potato with spinach and a mango salsa with white onion garnish. There are a ton of ingredients listed under garnish though, so just pick the ones you know you enjoy! This meal turned out so delicious and you can make a different meal out of the pork everyday if you want to. I have some of the Siete’s grain-free tortillas mentioned below that I plan to use for some of my mother's meals. Anyways, just wanted to mention again that I am very grateful for friends who send me paleo recipes to try! Surround yourself with people who make you better!

Original recipe found here Another seriously delicious taco-type bowl for this week! Though I think this burrito bowl tasted more like tacos then last weeks taco bowl. Nonetheless, I loved both. This one was especially fun to put together and just make to my liking. The only ingredient change I made was using 1 tablespoon of cumin instead of 2 for the enchilada sauce because I'm just not a huge fan of cumin. Also, the original recipe made this with quinoa, which I substituted for a cilantro lime cauliflower rice, so I guess I technically made two ingredient changes. I thought the cauliflower rice was a great pair with everything and a perfect paleo option. I actually couldn't pick out the lime or cilantro flavor once mixing everything together either, so you can definitely get away with making a really plain cauliflower rice (or just make regular rice if you are not paleo) since there is plenty of enchilada sauce. Speaking of that sauce, I purposely only added some back to the shredded pork, so I had a ton of it leftover. Just throwing that out there in case anyone else doesn't like a ton of sauce or they see how mine turned out and would rather have more sauce. This meal is worth making and one that I will definitely be making again!

Original recipe found here The original recipe for this was Pulled Pork Taco Bites with the pork served on roasted butternut squash slices. There was no way I was making tiny taco bites for a weeks worth of meals though, so I improvised and came up with this Garlic Butternut Squash and Cauliflower Mash. Sounds gross and I totally questioned myself all weekend if I should experiment with this or not, but I did anyways and I am so glad I went through with it. Not only did the mash turn out tasting delicious, but it was a seriously tasty pair with the pulled pork and mango salsa! If you are doubting the cauliflower part of the mash, then just leave it out, but honestly I didn't taste a bit of cauliflower and it was a sneaky way of adding some more nutrients into the meal. For the pork I used my new InstaPot again, but you can also make it in the slow cooker if you have that. There are also recipes for Mango Salsa, Traditional Salsa, and Chunky Guacamole for topping choices, so all of the variety! I personally loved the mango salsa, but that was the only one I tried. You can also check out your local grocery store's fresh made salsa and see if their ingredients are paleo-approved if you want to save some time in the kitchen. This meal was seriously as amazing as it looks and definitely one I recommend trying!

Inspired by this recipe I've had my eye on the Instant Pot for a while now after hearing how amazing it was from friends and also how much time it would help save doing meal prep. Since Amazon decided to flash it in my face on Amazon Prime Day I finally pulled the trigger and got it. For those who do not have a pressure cooker, majority of those recipes can still be done in the crock pot for 6-8 hours and without the added liquid (so for this pork recipe you would not add the 1/2 cup of water). Anyways, since I was out of town all weekend and my Instant Pot was delivered in time, I obviously had no other option except to put it to use right away. This pulled pork recipe was a winner since it includes very few and simple ingredients and I already had a bottle of Steve's PaleoChef Peach BBQ at home. Another paleo BBQ sauce option I often use is Tessemae's BBQ sauce, which is equally as delicious and also sold at Whole Foods. Anyways, besides the slow down from just being a first time user of the Instant Pot, this meal was complete in under an hour and a half. I baked 5 large sweet potatoes in the oven at 425 degrees for 40 minutes, flipped them over, and baked for an additional 40 minutes. I also threw the asparagus on the grill while I was in the middle of grilling everything for my pineapple chicken meal this week. With being out of town all weekend and starting meal prep late on Sunday, choosing meal prep recipes that are quick and simple are a must, but so is choosing recipes that can be made at the same time. It really helped reduce the stress of coming home late and having to get meal prep done by having one meal completely made on the grill while the other one was in the Instant Pot and in the oven. Just a meal prep tip I wanted to throw out there. Anyways, if you like BBQ then you will enjoy this pulled pork. I thought it was delicious and absolutely loved this classical meat, baked sweet potato, and veggie meal prep!

Original recipe found here I am still obsessed with the the Garlic Cauliflower Mash I made a couple times last month. so this week I decided to add some sweet potatoes into the mix. The verdict: the mash turned out absolutely delicious! I am so glad I tried this out. I'm always searching for ways to mix up how I make sweet potatoes and this one is a winner. Since I picked out the mash first, I found this simple crockpot carnita recipe to pair it with. This recipe does have a hint of Mexican and spicy flavor to it, so not your typical pair for a sweet potato mash, but I thought the meal was great! I also think anything pairs well with sweet potatoes though... Anyways, I put the pork in the crockpot on high for 6 hours. Once done, I shredded the pork and threw it on a baking sheet, drizzled some of the extra sauce from the crockpot and lightly sprayed some olive oil on top, then baked for 10 minutes at 375 degrees. The recipe calls for putting the shredded pork in a skillet to crisp and brown up, but I thought baking it would do a better job.

I've posted this paleo meatball recipe a couple times now, which means this recipe is clearly one of my favorites! I decided to switch it up this time though and pair it with a garlic cauliflower mash, and I even used ghee (clarified butter) as the recipe calls for. If you don't have ghee you can use your favorite cooking fat instead, which is what I have always done in the past whenever a recipe called for ghee. However, I recently bought ghee to make tasty paleo meals for my mom, so I am just making sure I put it to use. Anyways, I cannot believe how delicious the cauliflower mash turned out! I haven't had mashed potatoes in a long long time, but I really thought it tasted just like mashed potatoes. I was a little nervous that the meatballs and marinara sauce might not pair well with the cauliflower mash, but this meal tasted amazing. Also worth noting is that I used two 12oz bags of frozen cauliflower and barely had enough mash for 6 meals. These recipes are seriously worth making, both separate or together!

This is the last meal prep I'll have to do without an oven! Woo! Anyways, I decided to make a crockpot pork recipe from PaleOMG that I've made before. It's actually supposed to be paired with caramelized mashed plantains, which is pretty delicious, check out that post here. This pork recipe is pretty plain and definitely needs to be paired with something delicious and flavorful. Since I was lazy and didn't want to prepare the plantains, I made my go-to sweet potato applesauce mash. Just like last weeks mash I boiled about 5lbs of sweet potato for 30-35 minutes, drained it, and used a potato masher to mash it all. I added a cup of homemade applesauce, some cinnamon, and salt, and mashed everything together some more for the final product. I did note that I should have used another cup of applesauce since I had so many sweet potatoes, so if you are making this with a normal amount of sweet potatoes a cup is usually all you need. This meal was definitely a lazy one for me, but super easy to throw together and one I know I'd enjoy eating all week. If you're feeling up for it, I recommend trying the carmelized mashed plaintains with this pork. You will not be disappointed!

Original recipe found here I pulled both crock pot recipes this week from the blog post 30 Paleo Crock Pot Recipes. This pulled pork recipe caught my eye because it had the word "easy" in the name. I then noticed the homemade Paleo Peach Barbecue sauce and was sold. I already had a bottle of PaleoChef Peach BBQ Sauce in my pantry! Yes, I cheated. I can't actually tell you how this recipe is since I didn't make the sauce as the recipe calls for. I promise I will make this one again and actually try the homemade Paleo Peach Barbecue sauce so I can report how it tastes. In the mean time, if anyone makes this then please share how it turned out! I paired this with a baked sweet potato and some roasted shaved Brussels. I almost always roast Brussels with bacon fat (or actual bacon) and some salt. This meal was quick, easy, and super simple to throw together, and I absolutely loved it!

I started meal prepping paleo meals exactly four years ago and it has changed my eating habits and lifestyle entirely! “If You Fail to Plan, You Plan to Fail.” I highly suggest anyone that is starting to eat better, or trying to get back on track with their nutrition, to meal prep. Having the meal already made only increases your chances of making the right choice when you get hungry and it's time to eat!
Anyways, I was out of town this past weekend for the New Year, so I pre-orded Power Supply meals for lunch this week. For the second meal, I chose this crockpot pulled pork to make while I was at work. I already had some extra paleo Tessemae's BBQ sauce around and baking sweet potatoes in the oven doesn't take much prep time, so this meal was easy to throw together once I got home and turned out delicious! I had some extra time too, so I roasted some green beans in the oven with some salt and olive oil once the sweet potatoes were done.
