Alright I haven't done a repeat recipe in a while and I have been craving a good meatball and marinara meal, so I am bringing this recipe back. I posted this one back in February and have made plenty of other meatball recipes since, but this one is still my favorite one! I have also had a couple friends who made this and loved it too, so this one is seriously a must try! The ingredient list is super simple and the meal is done in no time. I chose to roast the zucchini noodles in the oven because I hate when day three come along and my zoodles are mushy, but that is just my preference. There is really no reason not to try this one out!

This recipe was as simple as it looks. If it's 7pm on a Sunday night and you still haven't meal prepped, this is the kind of recipe for you. I even bought already shredded cabbage and carrots, so the only preparation I had to do was slice the onions and grate the ginger. I used ground chicken instead of pork and also added some sliced green onions on top and this meal turned out delicious! I will definitely be making this in the future on weekends where I don't have much time to meal prep. I also want to try the recipe using ground pork and added crushed cashews as well. If you want to serve with Sweet and Sour sauce as the original recipe suggests, try this Paleo and Whole30 approved recipe for the sauce. If you are ever in need of a delicious, one-pot, easy, and fast recipe, this one is a winner!

Original recipe found here This recipe had me sold as soon as I read plantains! The pulled pork instructions are in a separate link below and was a quick and simple crockpot recipe. Making the smashed plantains was also pretty simple. I could have smashed mine down a little more, but they still turned out tasting amazing. To note, I used 3 plantains and all of the pulled pork (not just 3 cups) to make six meals. I also paired this with my roasted sweet potato fries, which made for an extremely delicious meal. This was the bomb and so worth trying out if you enjoy plantains!

I was looking around for a new sweet potato recipe and this Sweet Potato Lasagna caught my eye. The original recipe does include cheese, so if you are not dairy-free, check out the link below for that recipe. Even without the cheese though this turned out to be an awesome paleo version of the classic lasagna! It did take a little longer to make then I expected, but that is because I doubled the sweet potatoes and it took about an hour in the oven until the top layer of sweet potatoes were tender. Also, if you are making this paleo version without cheese, I would suggest using two eggs instead of one because one egg was not enough to pour over the casserole twice. Overall, I loved this sweet potato casserole dish and will definitely be making it again!

I do have to point out that this was not a typical recipe that I would choose; it did take a little longer to make since I paired it with sweet potato noodles and it also used almond flour, an ingredient I try to avoid using (mainly because it is so expensive). Either way, it was totally worth making and I also had a really awesome sous chef to help me out. I used six large sweet potatoes for the noodles and heated them on the stove until soft, which is why this meal took me so long to cook. Whether you pair these meatballs with sweet potato noodles, spaghetti squash, or other veggie noodles, this recipe is definitely worth trying!

Original recipe found here This pork carnita recipe is AMAZING. You must try! I used pork loin, so next time I need to try this with pork butt as the recipe calls for, but it still turned out so good. The original recipe prepares this in a dutch oven, but I tried it out using my crockpot and had success. If you make this, do not forget or overlook boiling the remaining cooking liquid! Pouring that thickened sauce back onto the pork really completed the carnitas. Also, I do have to point out that I finally made a cauliflower rice that wasn't plain Jane. The Mexican Cauliflower Rice recipe was equally as delicious and a good pairing with the carnitas. Let me know what you think if you make either of these recipes!

Original recipe found here I have to make more sweet potato noodle recipes since I recently purchased a spiralizer that can handle sweet potatoes. Plus, this one caught my eye because it looked amazing. Don't be discouraged by the long list of ingredients, you should be familiar with all of them (except the rutabaga, I had no idea what that was). If you do not have a spiralizer I suggest baking the sweet potatoes and filling them with the bolognese sauce. Another option is to make spaghetti squash to serve the sauce over, but I did REALLY like the sweet potato combo with this sauce. Also, mine turned out less like a sauce because I strained it, but that's just my personal preference because I hate extra liquid in my meal prep containers haha. Of note, this recipe is Whole 30 approved and also provides the option to not use the slow cooker. Let me know your thoughts if you make this one!

And for how simple the ingredient list is, this is a really flavorful and awesome paleo meatball meal! I decided to try roasting the zucchini noodles this time because I hate when there is extra liquid in the meal from boiling the noodles. If you do not have a spiralizer yet, I suggest you get one! I used my Veggetti (I found this for pretty cheap at my local grocery store a while back), which makes zucchini noddles real fast and easily. You can also make spaghetti squash to act as noodles instead. If you are looking for a healthy "spaghetti" and meatball recipe, try this one out!

Although I created this blog to share recipes, meal prepping is really what I do and recommend for others to try and do as well.
