Low FODMAP or not, this was delicious! Paired with spaghetti squash and sweet potato glass noodles and it was a tasty spaghetti bolognese pasta meal. If you're not eliminating garlic and onion feel free to throw that in here, but those are probably the only ingredients this leaves out to make it low FODMAP. The recipe below is for 4 servings and the ingredients are conversions from metric units, so just use the closest standard amount. Since I had to significantly increase the serving size I ended up making this entire meal in the Instant Pot on the saute mode. I threw the green tips of the leeks and the spinach in the food processor to dice up fast, and also did not end up making any additional vegetables since I roasted spaghetti squash. We will absolutely be enjoying this meal again soon!

Going to end the year with this delicious (low fodmap) meal right here! Only four ingredients to whisk together for the sauce/marinade, the chicken and veggies are cooked on the skillet, and the extra sauce is thickened up in a separate saucepan. The original recipe calls for red bell peppers, bok choy, and bamboo shoots, which we swapped out for carrots. You can easily swap in whatever protein or vegetables you prefer though. The chicken needs to marinate for at least 4 hours, so be sure to plan ahead for that or prep everything the night before. I didn't have rice vinegar so I swapped for white wine vinegar and thought the sauce still turned out great. The original recipe link has ingredient portions for one serving, however I altered them below to what a typical 4-5 serving recipe would look like. Also, instead of splitting the sauce in half I accidentally put all the marinade in with the chicken, so I ended up boiling the entire leftover marinade to make the sauce. Boiling it down for at least 5 minutes destroys any harmful bacteria, or so the internet says. Just throwing that out there in case anyone makes the same mistake or wants to preserve some more of the sauce. Some time saving tips, you can purchase Fody's Korean BBQ Sauce & Marinade to use for the sauce, purchase pre-cooked chicken/protein, and also purchase pre-cut veggies. You can make this Buddha Bowl completely to your preference and are guaranteed a delicious, meal! We will definitely be having this again and again.

Original recipe found here This turned out super delicious and will definitely be a repeat recipe in our house! Cook the diced chicken in a large skillet, throw the four sauce ingredients in the blender, then heat up the sauce and toss with the chicken. Can't get any easier then that! I've also made this by just throwing the chicken in the Instant Pot with the Pineapple Teriyaki Sauce, which turned out great as well and was an even more simple, less hands-on alternative. To keep this low FODMAP I had to leave out the garlic and limit the coconut aminos, so I used a significantly less amount of sauce. For reference, I quadrupled the chicken amount and left the sauce amount the same. If I paired this with a combo of cauliflower rice and rice I probably would have wanted more sauce, but this amount was perfectly fine with just rice - coming from someone who does not prefer a lot of sauce to begin with though. This tasty meal was enjoyed all week long and is definitely worth trying!

Original recipe found here Still experimenting with an elimination diet in our house and these meatballs have been a big hit a few times now. We've tried this with all ground turkey and all ground beef, and without the egg and optional flour each time. All of the seasonings bring a ton of flavor and we have enjoyed these as burgers on the grill as well. I opted for baking the meatballs this time since I quadrupled the recipe and had a ton of meatballs to cook, but pan frying them as the recipe instructs would only bring more delicious flavor. This time we paired the meatballs with spaghetti squash, sweet potato glass noodles, and a low fodmap marinara sauce, which turned out super tasty! Not to mention this was a nice mix up to the limited food options we have been consuming on this elimination style diet. This one is definitely going into the meal prep rotation of favorites!
Pan Fried Meatballs - Low FODMAP, Paleo, Whole30 Ingredients:
Original recipe found here This was a very comforting, chicken-noodle tasting kind of recipe! The original recipe calls for ground beef, but I used ground turkey instead as we navigate an elimination diet in our house. The recipe also calls for making this on the stovetop, however since I significantly increase serving size and ingredients I opted for making this in the Instant Pot on the sauté mode. Six pounds of ground turkey is not getting cooked in one or even two batches on the stovetop. I definitely encourage using the food processor to thinly chop the vegetables as it saves you time chopping them yourself and they will cook faster. Plus, everything tastes better bite-size, in my opinion! This is how you can sneak more vegetables into your kids and family member's lives who don't enjoy eating their veggies. Anyways, I scaled back the broth some but kept the ingredient amounts the same for everything else. We really enjoyed this meal all week long and like I mentioned before, it reminded us of a chicken noodle soup. If you're experimenting with an elimination diet or just trying to get back to eating whole foods then this is a great recipe for you!
Fail-Proof, AIP Recipe with Ground Turkey (Paleo, GF, DF) Ingredients:

Original recipe found here Apparently cowboy butter is a thing? I never knew, but I am glad I gave this recipe a try! Super light tasting and packed with all the flavor. It was a refreshing change to the typical meal prep recipes I try out too. This is a 15 minute one-skillet recipe once you have all your ingredients prepped and ready to go. I ended up doing 4 batches of this recipe though, so this took a little longer for me. If you don't own a sprializer or are short on time then you can almost always find pre-spiralized zucchini at the grocery store. I ended up spiralizing mine the night before and that actually allowed me to drain out the excessive water a little better. I also paired this with some sweet potato glass noodles to get my carb source in and I loved that combo. Even if you don't try this for meal prep this is definitely a great recipe to have on hand for a quick meal to whip up. I'll definitely be saving this one to make again soon.

Original recipe found here Technically you can eat these for breakfast, so I am totally passing this as a meal prep recipe. These turned out so delicious and are probably my new favorite paleo cookie! I typically just enjoy the classic chocolate chip, but the walnut, coconut, raisin, banana, and dark chocolate combo is on point. Not to mention this was an extremely easy recipe to whip up and the ingredients are simple. These made about 18 cookies for me and took the full 18 minutes, which I might even stretch to 20 next time. I took most of these to a friends house to enjoy, and the rest didn't make it to the next day. Will definitely be making these many more times!

Original recipe found here Don't let this plain picture fool you! This meal was seriously packed with SO much flavor. Top with some salsa and guacamole or avocado and you've got yourself a real delicious burrito bowl. Now I will admit that if you have to quadruple the recipe like I did, then meal prep just got a little longer. I had to do a ton of slicing and dicing, then cooked the chicken in four batches. If you can get pre-sliced peppers and onions then that always helps speed meal prep up a bit. I also opted for not making the homemade guacamole, but if you have the time definitely go for it. I especially loved the cauliflower rice recipe too! It is packed with so much flavor and was different then any recipe I have tried before. Even if you don't make this exact recipe the cauliflower rice portion is worth saving and trying out. Overall, a super delicious meal and recipe grabbed from the The Paleo Running Momma blog!

Original recipe found here This meal turned out absolutely amazing!!! It was seriously so comforting and delicious! The sauce was certainly not an overwhelmingly mustard flavor at all, and even Robbie, who hates mustard, loved this one. There is not much to the recipe in terms of ingredients or difficulty. If you don't have an Instant Pot you can simply sear the chicken in a stir fry pan then throw everything in a slow cooker. Since I tripled the ingredients to make enough meals for our needs, I had to brown the chicken in three batches before throwing everything in the pot to cook. I increased the Instant Pot to 20 minutes and that was more then enough cook time. Most of the chicken thighs stayed together, but would easily pull apart. This is one recipe that I would not skip out on thickening up the sauce with some added thickener. I usually do a 1:1 when using arrowroot starch, so I stuck to that conversion instead of what was recommended in the recipe. I thought the chicken paired especially well with the roasted sweet potatoes and shaved brussels sprouts. Definitely a meal we will be eating again soon!

Recipe Notes *To make date paste for this recipe, place 1/4 cup pitted medjool dates (about 3) in 2-3 Tbsp of very hot water to soften. After 5 minutes you can stir to make sure they'e soft, then blend the mixture in a high speed blender or small food processor. Blend until smooth and add water if needed to get the right consistency. Original recipe found here I've made the Almond Flour Blueberry Banana Muffins recipe a couple more times and still love that one, but wanted to try out a plain banana recipe this time around. This recipe below did not disappoint! Simple ingredients without a ton of flour, so these turned out very light tasting. Also, although it says banana nut, the only nuts the recipe calls for is almond butter. If you like a crunch I suppose you can top with nuts or just throw some into the batter. The recipe said it yields 12 muffins, but I ended up having enough batter for 18 muffins, which just means a serving is more like two. These turned out smelling and tasting delicious, and I'll definitely be making again soon!
