I pulled both crock pot recipes this week from the blog post 30 Paleo Crock Pot Recipes. This pulled pork recipe caught my eye because it had the word "easy" in the name. I then noticed the homemade Paleo Peach Barbecue sauce and was sold. I already had a bottle of PaleoChef Peach BBQ Sauce in my pantry! Yes, I cheated. I can't actually tell you how this recipe is since I didn't make the sauce as the recipe calls for. I promise I will make this one again and actually try the homemade Paleo Peach Barbecue sauce so I can report how it tastes. In the mean time, if anyone makes this then please share how it turned out! I paired this with a baked sweet potato and some roasted shaved Brussels. I almost always roast Brussels with bacon fat (or actual bacon) and some salt. This meal was quick, easy, and super simple to throw together, and I absolutely loved it!

With the super bowl going on this Sunday I tried to prepare an easy and quick meal prep for this week. I already had one crockpot meal, so I looked around for a simple chicken recipe for my other meal. This Baked Cajun Chicken recipe was exactly what I was looking for! If you are new to meal prep or sick of eating the same old chicken each week, this is the perfect recipe for you to try. The only note I have for this recipe was that since I used about 2lbs of chicken, I probably should have doubled the spice ingredients. Either way though, the chicken still turned out tasting plenty flavorful! I paired it with some roasted Brussels and a baked sweet potato. I roasted the Brussels with some onions and a tiny bit of honey and thought it paired pretty well with the cajun chicken. I also just really love roasted sweet Brussels, so I'd probably think they pair well with just about anything. Anyways, if you are looking to spice up your meals then this is the recipe you need to try!

Original recipe found here Yes, I am having Thanksgiving food all week, and probably next week too. I know chicken is not your typical Thanksgiving day food, but this meal is a must-try at some point over the holiday or fall. I used chicken breasts instead of thighs and honey instead of the maple syrup, and thought the chicken still turned out full of flavor and delicious. I paired this chicken with a roasted sweet potatoes and Brussels recipe (also below), which turned out amazing together. I will admit that this meal was a little more time consuming to put together, but that is because both recipes use the oven and I doubled the sweet potatoes and Brussels recipe. That detail aside, I highly suggest these recipes paired together, but they are just as delicious on their own. Let me know if you give either of them a try!

Original recipe found here This was the most simple meal ever to put together and it turned out delicious! The roast beef took about 3 1/2 hours on low in my crockpot to reach 150 degrees and be done. While I waited on that, I shredded 2lbs of brussels through the food processor and greased down my baking pan with bacon fat. I roasted the brussels at 375 degrees for 10 minutes, then took them out to mix around and roasted again for another 5 minutes. I then took the pan out and placed 5 strips of cut bacon on top of the brussels and put the pan back in the over until the bacon looked crispy and done. I actually left mine in for a little too long and the brussels were extremely roasted, so definitely need to keep a close eye on them! Anyways, the beef turned out tasting amazing and brussels with bacon never dissapoints. If you are looking for an easy meal with few ingredients, this is it.

Original recipe found here After I made this meal, I was reminded of another meal prep and healthy lifestyle hack I thought I'd share. Make meals you absolutely look forward to eating!!! Eating healthy does not have to be boring or feel restrictive. This meal was the bomb and is perfect to make this fall! Also, if you've never gone apple picking and made your own applesauce, go do it! My boyfriend's mom makes amazing homemade applesauce with nothing but apples, which is what I used to make the mash. I also roasted some shredded Brussels sprouts with bacon and you can find that recipe here. I seriously cannot wait to eat this meal for lunch this week!

Original recipe found here If you check out the link for the original recipe below you will also really want to make this rib recipe! The pictures look amazing and had me sold right away. I have never attempted making ribs before, so I was a little nervous to try this recipe, but they turned out delicious. My only fault or note if I were to make this again would be to cook the ribs in the crock pot for another hour or two; the meat was not quite fall off the bone after 6 hours. I also paired this with roasted Brussels and sweet potatoes, which is a bit random to combine ribs with, but I just love both of those sides so I went for it. Anyways, I am glad I did because I ended up really enjoying this meal and the extra sauce over the ribs and Brussels was delicious. Broccoli would be another good, and probably more normal, vegetable to pair with the ribs too. I am seriously looking forward to every meal I made for this week! This is another great and simple crock pot recipe you should definitely try.

Casseroles are typically easy one dish recipes, but they hardly ever keep together for an appetizing looking picture. So despite how it looks, this recipe turned out pretty yummy. It is pretty basic with just chicken, Brussels, broccoli, Italian seasoning, and a sweet potato mash, so if you like all of those ingredients then you will enjoy this recipe; it tastes just like it sounds. If you end up trying this one out, don't skip out on adding salt to taste! That is definitely needed for this simple casserole recipe.

Original recipe found here This is a recipe of mine that I make time-to-time when I want something basic or just don't have another recipe in mind to try out. For the Crusted Chicken I have also used just almonds and a mixture of almonds and pistachios; both options turned out great. The amounts of Dijon Mustard and Honey that I use vary and if I run out of the mix before I'm done coating the chicken, I'll just add a tiny bit more of each. For the Roasted Brussels I like cooking the bacon first and leaving the fat behind for the Brussels to bake in. This is one of my absolute favorite side dishes! I have made this for several cook outs or gatherings and it always gets eaten. You really can't go wrong with the Brussels and bacon combo. Try this one out!

Who doesn't love grilling out in this summer weather? This grilled basil garlic chicken was super simple and easy to prepare and even quicker to grill. I paired this with balsamic roasted brussels sprouts, which I accidentally did not make the way the the recipe calls for, but it still turned out great anyways. I ended up mixing all the ingredients together and then roasteded the brussels. I also ended up stirring everything around every 10 minutes and only roasted them for about 25 minutes. Always keep an eye on your veggies while roasting them because it's easy to burn them! For being so simple this meal turned out really yummy and plenty flavorful. It will definitely be one of those recipes I have in my back pocket for days I need to make a quick meal!

Original recipe found here This was an awesome Memorial Day recipe to make! I opted for grilling the burgers instead of using a cast iron skillet as the directions call for. Also, it was a first for me throwing bacon in the food processor, but I see myself using that idea again in the future! For the side I threw some brussels sprouts and sweet potatoes on the same pan I used to bake 6 slices of bacon on for the Four Layer Beef & Bacon Casserole I also made this week, so the veggies soaked in the leftover bacon fat. I added some salt and roasted for 10-15 minutes at 375 degrees F. I then mixed everything around and roasted for another 10 minutes and served with the the burgers. And don't forget to top with avocado! Delicious, easy, and quick meal for prepping or making for family and friends.
