If you are looking to switch up your egg muffin in the morning then give this one a try! To get 12 muffins I doubled the recipe below, with the exception of still only using 2 Tbsp of Maple syrup and totally omitting the egg whites (after adding 8 whole eggs, there was plenty enough mix to fill the 12 muffin containers). Besides waiting on the bacon to cook and spiralizing the sweet potato, there is very little prep for this recipe. I thought they turned out looking and smelling amazing, but I make these morning muffins for my mom's breakfast, so I didn't actually give them a try. I can't imagine she will not enjoy these though! Let me know if you give them a try and what you think.

I came across this breakfast meatball recipe and decided it was probably time to try a breakfast recipe that wasn't in the shape of a muffin. These meatballs were extremely easy to prepare and make, especially since I threw the bell pepper and spinach in the food processor. I make these breakfast recipes for my mom and she is not a fan of eating her greens, so the smaller the vegetables are the better. I made this recipe into 21 tiny meatballs and baked them for 20 minutes with an additional 5 minutes under the broiler. I also taste-tested one of the meatballs and thought they were delicious! I paired the meatballs with an egg that was scrambled with a little bit of culinary coconut milk and used this random Silicone Egg Ring I found to make the egg into a perfect circle. That part is totally not necessary, I just wanted to try it out. If you are looking to switch up your breakfast routine then this is a great recipe to try out!
Paleo Breakfast Meatballs Ingredients:

Original recipe found here Changed up my mom's breakfast this week with these sweet potato muffins! They were really simple to make, but the batter was pretty sticky from all the cashew butter, so it was not as quick as I thought it would be. I only added 1-2 Tbsp of 100% maple syrup and I also added a scoop of Paleo Protein to get some more protein in these muffins. There are also ingredients and directions for making frosting if you want to top these muffins off, but I chose not to add any. Unfortunately I had to resist all temptation to taste test these since I made these for my mom to eat for breakfast all week. They turned out looking and smelling amazing though and I have a feeling this one will be a repeat. Let me know if you give this recipe a try and what you think!

Original recipe found here The original recipe is for Sausage Pizza Egg Muffins, which I made for my mom back in June and she did not end up enjoying them. That was mainly my fault though because I picked an Italian sausage that I had never tried before and it definitely had a very bold and spicy flavor to it. Anyways, I decided to remake this recipe to my mother's liking and used ham instead of sausage and used diced tomatoes instead of sun dried tomatoes. This version is a little quicker and easier to make too since you don't have to wait for the sausage to brown. Not only were these simple to prep, but they turned out looking and smelling amazing. There is no way my mom will not enjoy this version!
Ham Pizza Egg Muffins Ingredients:
Original recipe found here I decided to mix up my mom's breakfast prep and try out this super easy egg casserole! Not much prep involved, so I got this casserole done while also meal prepping lunches for the week. I threw the sweet potato in the food processor to shred instead of cutting thin slices. I also diced up the spinach and layered it on top of the turkey before adding the eggs. The spinach still rose to the top anyways though, so not sure if that part really matters. If you make this, don't forget to season the turkey and eggs with salt and pepper! I added at least a 1/2 teaspoon of each. I think without seasoning this casserole it would turn out pretty plain Jane. Anyways, I used an 8 x 8 baking dish and this casserole was done after 35 minutes in the oven. I also sneaked a couple bites in when it was done and thought the casserole was delicious!

Original recipe found here Remember those Paleo Blueberry Pancake Muffins I made? Well this is the same recipe just using breakfast sausage links. Real creative, I know! I unfortunately haven't seen the Birch Benders Paleo Pancake & Waffle Mix at Whole Foods since the first time I bought a couple, so I might have to purchase it from Amazon for now on. I make these breakfast type muffins for my mom because they are easy to prep ahead of time and also easy to grab in the morning for breakfast. My mom loves them and as someone new to the paleo lifestyle, I think these muffin recipes help her not think she is necessarily on a "diet." I mean who eats delicious muffins on a diet? Anyways, I add a Paleo Protein scoop to the muffin mix just to get some more protein into my mom's diet, so that ingredient is totally optional. These have been a staple and easy breakfast option for my mother and one that I will continue to experiment with!
Paleo Sausage Pancake Muffins Ingredients:
This was a fun and easy one to make! Only 5 ingredients and not too much prep involved either. Instead of grating the sweet potato, I peeled and cut the sweet potato into smaller chunks, then threw them in the food processor to shred into smaller hash-like pieces. Also, make sure to add salt and pepper to the sweet potato hash before lining the muffin pan; I almost forgot to do that. After the sweet potato cups were made, all I had to do was crack an egg into each muffin, top with bacon, and put back into the oven. Easy as that! I also added a dash of salt on top of the eggs before putting back into the oven as well. This recipe makes 12 egg muffins, so if you only want 6 muffins then you can easily reduce the ingredients in half. I see this recipe being a repeat breakfast option for sure!
Eggs and Bacon in Sweet Potato Cups Ingredients:
Original recipe found here Another yummy egg muffin recipe! There are seriously so many ways to mix up the egg muffin. We had left over spiralized sweet potatoes that had to be put to use, so I incorporated those into this weeks egg muffin. I found a chorizo muffin recipe (link is below) for inspiration and ended up using breakfast sausage and adding caramelized onions with the left over spiralized sweet potato noodles. These muffins were for my mom, so I did not actually eat them, but if I were to pick my favorite one that I've made so far I think it would be this one! I love breakfast sausage, onions, and sweet potatoes and I took my time cooking them before assembling in the muffin pan and baking, so I just know they had to of turned out amazing. Paleo Egg, Sausage, and Sweet Potato Muffins Ingredients:
Inspired by this recipe Had a last minute request by my mom for a breakfast change the other week, so I got resourceful with what I had in the fridge and tried this smoothie combination. Now she does not like coconut whatsoever, but so far she has enjoyed all of my recipes that use coconut milk and coconut oil, and she even loves the paleo-approved coconut macaroons that I give her. Of course if I told her there was coconut in them she probably would not enjoy them, but what she doesn't know doesn't hurt her, right? Anyways, I say all of that because this is a coconut milk based smoothie, and you can barely taste the coconut. I made this one for myself as a treat last week and I am obsessed. This smoothie is incredible! I highly suggest using the SO Delicious Original Culinary Coconut Milk and you can even get the light version if you want less fat. It is not stored in the refrigerated aisles at the grocery store, but with the canned coconut milk wherever that aisle is at in your local store. This recipe makes one serving, and the water amount is an estimate; add more or less as you wish to make the smoothie less thick. My mom absolutely loved this smoothie for breakfast, so I went ahead and prepped a few more to put in the freezer. If you freeze this I suggest taking it out first thing in the morning to let it thaw out, so you can actually enjoy it as a smoothie. If not, grab a spoon and enjoy an ice cream like treat for breakfast. Either way though, this was by far the easiest breakfast prep I have ever made! If you forget to meal prep you can quickly make this the night before or in the morning if you have the time.
Strawberry Pineapple Coconut Smoothie Ingredients:
Cooking for my mom and making her eat paleo means I need to find foods that keep her happy and that means making snacks and sweets for her too. I have now made this recipe a couple times for her and not only does she love them, but so do I! Although I am not the biggest fan of baking paleo goods (just because they are still "treats"), this is an opportunity for me to sneak a scoop of protein powder in the mix. It's not much, but the more protein I can get that woman to eat the better. For this batch I added the optional 2 tbsp of pure maple syrup, 1 scoop of Paleo Protein, and 3-4 Enjoy Life Semi-Sweet Chocolate Mega Chunks to each muffin and this recipe yielded 14 muffins, at close to 16.3g Carbs, 8.7g Fat, and 5.2g Protein per muffin. I rarely include macro numbers for my meals, but since baking requires you to be accurate with measuring ingredients and I made exactly 14 even-looking muffins, it was a little easier to provide macros for. Of note, if you don't add the protein scoop I think this recipe would yield 12 muffins. Alright I'm done rambling. Let some of your bananas ripen and give this recipe a try!
