I've recently been posting more breakfast/snack-type muffin recipes because that's what I have been prepping for my mom to eat. However, this sweet potato muffin recipe was 100% for me! I came across a delicious looking and simple-ingredient sweet potato paleo pancake recipe (link is below) and saved it to make one of these weekends. Then I got to thinking how I am in this class all week and how I will most definitely need to pack a lot more food than normal. This is how I came about turning that pancake recipe into a muffin recipe and found the best snack ever to pack for the week. I subbed out the coconut flour for a scoop of Paleo Protein and thought it worked out perfectly. There is no need to add protein powder if you don't want it though. Next time I make these I'm going to use coconut flour as the recipe calls for. Anyways, these turned out delicious and I was happy to have a carb filled snack on-the-go that wasn't fruit!

How delicious do these look and sound!? I did not actually try them because I made them for my mom's breakfast all week, but I had a taste tester tell me they were good! This recipe definitely spiced up the egg muffin game and are worth trying if you are sick of the typical eggs and bacon combo. Make sure you check the ingredients on the sausage you pick out and get one without any added sugar. I used a 10 oz package of cooked Italian sausage, which ended up making this recipe yield 18 muffins. Also, I soaked my sun dried tomatoes, drained them, then cut them up real small, so that there was never an overwhelming bite of tomato. Another easy, quick, and successful breakfast prep that is worth giving a try!

Original recipe found here I am still trying really hard to find all the most delicious paleo food options to make for my mom. I found this Birch Benders Paleo Pancake & Waffle Mix at Whole Foods and had to give it a try. I used the mix to came up with this muffin recipe below and they turned out amazing. I probably could have taken a better picture to make them look more appetizing, but I promise they turned out tasty! I slipped in a scoop of Paleo Protein with a little bit of 100% maple syrup in hopes to mask any protein powder flavor, topped the muffins with frozen blueberries, and baked for 20 minutes. My mom loved them! There's room to play around with the recipe to your liking as well, which is why there are so many optional items listed. I am sure the fruit does not to be frozen, that is just what I used. I also only threw in 100% maple syrup to mask the protein powder, so next time I make these I'll see how they taste without the syrup. For those who are looking for a paleo breakfast option that does not include eggs, here you go! If you are eating this as a meal then I recommend the protein scoop just to add some more protein, but if you don't need extra protein then no need to add the extra scoop. My friend really enjoyed this one a while ago and I finally gave it a try. I ended up doubling the entire recipe to make enough for eight meals, with the exception of only using 8 sausage links and 3 small/med squashes. (I made two extra meals for my mom, decided I only needed one sausage link per meal, and I ended up scooping out extra squash to complete the two extra meals.) I was a little nervous to meal prep this recipe because I've never had acorn squash before, but it was an amazing pair with the chicken sausage, apples, and caramelized onions. All the comforting fall foods! I totally forgot to add in the spinach, but I did make some roasted brussels sprouts with some of the diced apples I set aside. If you need to change up your typical meal prep, this was a flavorful, comforting, and tasty meal that I really enjoyed!

Original recipe found here Another egg muffin recipe that I prepped for my mom's breakfast this week. You honestly can never go wrong with an egg muffin! Just make sure to use ingredients you know you like and they always turn out so delicious. I love making sweet potato hash in bacon fat, so I think this muffin recipe would be my favorite of the ones I've made so far. Plus, these ones especially smelled amazing when they were done too. Egg muffins are really easy to prep and a great option for an on-the-go breakfast!

Original recipe found here Another simple egg muffin breakfast option that I made for my mom this week. I bought an Applegate brand sliced ham, which is gluten free, dairy free, and casein free, and definitely the best deli meat brand I have come across. Note, this recipe only makes 6 muffins, so if you want to double this make sure you buy 2 packages of Applegate deli meat! Throw in your favorite veggies or just follow the recipe as is and use diced bell peppers. I added a tiny bit of cooked bacon and 1/2 tsp of dried oregano to this recipe, but the original recipe does not include that. These type of breakfast egg muffin recipes are really just an idea and you can get as creative as you want with them. This one turned out delicious and if my mom doesn't like them then I will certainly enjoy them!
Easy Paleo Ham & Egg Cups Yields: 6 Muffins Ingredients:
Original recipe found here A breakfast meal prep recipe! I never post these! I am putting my best efforts forward to get my mom to eat paleo to help her health, so I prepped these for her. Since I did not eat them I can't give my review on this one, but they are pretty basic egg muffins so I really don't think you can go wrong with these. This recipe yielded 12 mini muffins, so about three of these would equal having 2 eggs and 1.5 slices of bacon. I typically recommend an egg muffin to those that are new to paleo, need an on-the-go breakfast option, or just need a new breakfast idea that the whole family will enjoy. This one is a very general recipe to build from, so add whatever veggies or protein you like to them and get creative!
Bacon Egg Breakfast Bites Ingredients:
Original recipe found here I spotted this mason jar of happiness while looking around for paleo breakfast options, so I had to try it right away! I am the type of person that can eat the same breakfast everyday, so I don't post many breakfast options on the blog. However, the more I work with other people, the more I realize most people are not like me and they also don't enjoy eating eggs or oats every morning. This Monkey Salad is a great option to mix up your breakfast routine and it can also be prepped ahead of time if you need something on-the-go. I do want to point out that it is high in carbs with all of the fruit (about 47 grams), so if you want to lower the carbs I'd recommend only using half a banana (making it about 32 grams of carbs). I also recommend having additional protein with this if you are having it for breakfast. If you are a person who puts protein powder in their coffee, then that is a great option to pair with this. I personally ate this as an after workout snack and it was seriously a treat! I have a feeling I'll be making this one a lot this summer.

Original recipe found here This was amazing!! I deviated from the original recipe a tiny bit just for meal prep purposes, but I imagine making the recipe as is would be just as delicious. The two big changes I made was I roasted about 5 sweet potatoes and doubled the ground beef. Every other ingredient was as the recipe calls for with the exception of the eggs. I decided to leave out the last few steps in the recipe and did not add eggs at all. My main reasoning for that though was I wanted the meals to last six days. If I were making this recipe for breakfast or for family and friends I would have added the eggs. So if anyone makes this recipe as is, please let me know how it turns out! Again, this meal was absolutely delicious. You can really never go wrong with roasted sweet potatoes and bacon!
"Bacon Burger and Fries" Ingredients:
Original recipe found here It's Thanksgiving week!! This stuffing was amazing and could easily be a Thanksgiving side dish or breakfast. I added 1 lb of lean ground beef to this recipe to make it more into a meal for the week. I also did not add the dried cranberries, but I think that would only make this meal taste even more yummy and fall-like. I did add the egg to try and make everything stick together, but I think adding an extra pound of beef means I should have used two eggs. Other then those alterations, I made the recipe as is and will definitely be making this again for family and friends to try too. This was absolutely delicious!
